you need and i mean, NEED this Fresh and Light Nourishing Summer Salad. it’s the perfect side salad to have on hand during the warm months.
with a delicious and nutrient-dense combination of herbs, produce and nuts, this salad is both satisfying and easy to make.
Fresh and Light Nourishing Summer Salad is as basic as salads get!
you just have to throw everything into a big salad bowl and mix it together.
Fresh and Light Nourishing Summer Salad is actually a fabulous topping on toasted bread too.
it sort of gives bruschetta vibes and i am so here for that.
the combination of sweet strawberries and ripe mango goes so well with avocado, tomato, walnuts, onions and herbs.
when it comes to dressing the salad, the ingredients could not be more simple.
you just need a few squeezes of lemon juice, sea salt, pepper, extra virgin olive oil and balsamic glaze.
while Fresh and Light Nourishing Summer Salad does not have any vegan cheese, you’re more than welcome to add some.
vegan feta would be PERFECT in here and provide creaminess, tangy flavor and a yummy texture.
if you’re not a fan of walnuts, you can totally swap those out for another kind of nut.
pecans, cashews, almonds or even sunflower seeds to keep things nut free would be delicious.
