if you like salads that taste like a five star restaurant made them, then you came to the right place.
Delicious Broccoli and Tofu Curry Pasta Salad is probably the best salad i have made to date, and we can thank the dressing for that.
wow, where do i begin? how about we start with the crunchy roasted broccoli and amazing tofu.
you can roast the broccoli and tofu on the same baking pan at 400 degrees for about 22-25 minutes.

i like a nice crisp on the broccoli and for the tofu to be golden brown.
then, i toast some cashews in the oven until they also golden brown.
you can replace the cashews with another type of nut or seed, but cashews compliment the dressing flavors the best.
pasta is a huge component of this recipe as this is a pasta salad after all!
the pasta will give the salad substance and make this feel more like a meal as opposed to a side dish.

i recommend using a protein pasta for a more filling dish, but any will work here!
between the tofu and a protein pasta, Delicious Broccoli and Tofu Curry Pasta Salad will have you feeling plenty satisfied.
medjool dates are a must in Delicious Broccoli and Tofu Curry Pasta Salad by the way!
if you just don’t like dates or don’t have any on hand, raisins would be a good replacement.
the sweetness of the dates is the ultimate compliment to the otherwise very savory flavors.
ah, and the dressing, the best part by FAR. oh my goodness, this is the best y’all.
here’s the secret to a creamy and dreamy dressing texture- half dairy free yogurt and half vegan mayo!
i used kite hill plain and unsweetened yogurt and chosen foods vegan mayo.
you will need 1/3 cup of each along with some vegetable broth to thin it out.
the main flavor here is curry, and this recipe calls for 1 tbsp!
also, you’re going to need some minced garlic and then liquid aminos for the salty component.
i do add 1 tsp only of maple syrup, which is very important in balancing out the flavors.
if you don’t want to use maple syrup, coconut nectar would be a good alternative.

Delicious Broccoli and Tofu Curry Pasta Salad

Ingredients
10 ounces broccoli florets
1 pound pasta of your choosing
14 ounces cubed extra firm tofu
1 cup toasted cashews
1/2 cupped chopped medjool dates
- dressing
1/3 cup vegan mayo
1/3 cup vegan plain unsweetened yogurt
1 tbsp minced garlic
1 tbsp curry powder
1 tsp maple syrup
2 tbsp liquid aminos
1/4 cup low sodium vegetable broth
Directions
- preheat the oven to 400 degrees and cook pasta according to package directions.
- lightly coat the broccoli and tofu in avocado oil and bake at 400 degrees for 22-25 minutes.
- add to a large bowl with the cooked pasta, dates and toasted cashews.
- whisk the dressing ingredients together, pour over the pasta salad and mix well. serve room temperate, cold or warm.
- store in the fridge in an airtight container.
