Vegan Greek Lemon Potatoes

you want to know how i have been preparing for my trip to Greece next week? i have been eating a lot of greek food instead of packing.

now that’s my kind of preparation lol.

ok, if you’re going to be making any greek food in the near future, just make sure my Vegan Greek Lemon Potatoes are on your lineup.

you only need a handful of simple ingredients and a 9 x 13 inch baking pan.

in fact, you can throw all of the ingredients into the baking pan and mix everything up in there.

Vegan Greek Lemon Potatoes will make for a total of one hour and ten minutes.

this is how i divided the time up. i pulled out the potatoes and stirred them after twenty minutes and did that twice.

the last time the potatoes went back into the oven, they baked for 30 minutes, so 20, 20 and then 30.

what you are left with is this fabulous sauce with incredibly creamy potatoes.

i take the leftover olive oil and lemon and drizzle it back onto the potatoes.

typically, greek lemon potatoes are made with chicken broth but of course i used lemon to make them vegan.

a combination of extra virgin olive oil and just a little bit of vegan butter makes them SO creamy.

for vegan butter, i recomend miyoko’s and i used their oat based butter.

Vegan Greek Lemon Potatoes

Ingredients

  • 2 and 1/2 lbs yukon gold potatoes cut into wedges

  • 1/2 cup extra virgin olive oil

  • 2 tbsp vegan butter

  • 1 and 1/2 cup vegetable broth

  • 1/3 cup lemon juice

  • 1/2 tbsp dried oregano

  • 2 tbsp minced garlic

  • 1 tsp or more of sea salt

Directions

  • preheat the oven to 400 degrees.
  • add all ingredients to a 9 x 13 baking pan.
  • mix as thoroughly as possible and try to make sure the potatoes are evenly spread out/coated.
  • bake at 400 degrees for 20 minutes, remove from the oven and stir. then, bake another 20 minutes, remove from the oven and stir. lastly, put the potatoes back in the oven for 30 minutes, and then they’re done.
  • let the potatoes cool down, serve with your favorites and enjoy!
