Vegan Greek Lemon Potatoes

Ingredients

  • 2 and 1/2 lbs yukon gold potatoes cut into wedges
  • 1/2 cup extra virgin olive oil
  • 2 tbsp vegan butter
  • 1 and 1/2 cup vegetable broth
  • 1/3 cup lemon juice
  • 1/2 tbsp dried oregano
  • 2 tbsp minced garlic
  • 1 tsp or more of sea salt

Instructions

  • preheat the oven to 400 degrees.
  • add all ingredients to a 9 x 13 baking pan.
  • mix as thoroughly as possible and try to make sure the potatoes are evenly spread out/coated.
  • bake at 400 degrees for 20 minutes, remove from the oven and stir. then, bake another 20 minutes, remove from the oven and stir. lastly, put the potatoes back in the oven for 30 minutes, and then they're done.
  • let the potatoes cool down, serve with your favorites and enjoy!
