are you someone who is constantly looking for an easy and quick breakfast that will leave you feeling good? then these Blueberry Pie Gut Healthy Overnight Chia Oats are going to be perfect for you!

overnight oats have become super popular lately, and there’s a reason why! hence the title “overnight,” you make these the night before you want to eat them and just take them out of the fridge the next morning!

it’s super easy to “rehydrate” the over night oats by adding some dairy free milk in the morning because the mixture gets THICK.

this recipe requires minimal ingredients and is super easy to make! plus, they’re great for gut health – making sure your digestion is going to be at tip top shape.

the health benefits are plentiful, but the taste is exceptional too. yes, this ACTUALLY tastes like blueberry pie!

for the chia oat pudding, you just need coconut cream, chia seeds, oats, maple syrup, and dairy free milk.

i stick this into the fridge for at least 4 hours and rehydrate it with more milk before i am ready to eat.

i made a delicious homemade blueberry jam that only requires 5 ingredients!

you can layer the jam into the chia oat mixture for an amazing texture combo.

i also added some nut butter and more fresh blueberries on the top to really freshen it up, but you can omit those if you want.

you know the drill, for me, peanut butter makes anything that much better.

these overnight chia oats are one of my favorite things to make, especially when you’re a busy mama like me!

to keep these gut friendly, i used used two tbsp of maple syrup in both the chia oats and jam, and it honestly tastes plenty sweet to me!

Blueberry Pie Gut Healthy Overnight Chia Oats

Ingredients

  • chia oat layer
  • 1/3 cup coconut cream

  • 1/4 cup chia seeds

  • 1/3 cup oats

  • 1.5 tbsp maple syrup

  • 3/4 cup dairy free milk

  • blueberry jam
  • 10 ounces frozen blueberries

  • 2 tbsp chia seeds

  • 1 cup water

  • 1 tbsp maple syrup

  • 1 tbsp arrowroot powder

Directions

  • mix the chia oat pudding ingredients together and place in the fridge for at least 4 hours. rehydrate with more dairy free milk if it’s too thick.
  • for the blueberry jam, add all ingredients to a pot and cook on medium heat for 10-12 minutes or until the jam is thick.
  • layer parfaits with the pudding and jam and add nut butter and fresh blueberries if you want.
  • store in an airtight container and enjoy!
