Vegan Ferrero Rocher Protein Bars

if you’re a lover of Ferrero Rocher or just hazelnuts and chocolate in general, then these Vegan Ferrero Rocher Protein Bars are perfect for you!

this will come off dramatic, but i can accept that- these bars are one of the best desserts you will ever have.

taking a spin off of the classic chocolates, these replica protein bars are still filled with the fudgy and crunchy goodness that makes the originals so yummy.

while i will enjoy ANY vegan dessert, you know that i do like to make mine with wholesome ingredients when possible along with added protein.

between sweet and goey medjool dates, vanilla protein powder, cocoa powder and roasted hazelnuts, these genuinely taste like the real deal.

while i used vanilla protein powder because it balances out the flavors here better in my opinion, chocolate is completely fine.

i used a cup of roasted hazelnuts (obvi needed for that Ferrero Rocher deliciousness) and i one hundred percent recommend roasted ones.

if you can’t find roasted ones, it’s so worth doing yourself but the flavor profile will be exponentially better if they’re roasted.

i also used oat flour to make the bars, which i think works best for this! as far as flour subs, i have not tested anything else.

however, an ingredient that you definitely can sub it sunbutter, and if you choose to, i recommend almond or cashew butter.

i blended the ingredients for the bars and pulsed the hazelnuts in after. you’ll have to freeze the the bar dough in a parchment lined baking pan for 2 hours.

after taking them out of the freezer, i cut them into slices and coated them with melted chocolate and chopped hazelnuts – yum!

these bars are sooo good and perfect for a midday snack or dessert!

the bars that i made are huge, so my husband and i cut them in half for serving sizes, but you can make yours as large or small as you want.

Vegan Ferrero Rocher Protein Bars

Ingredients

  • 1/3 cup cocoa powder

  • 1 cup medjool dates

  • 1/2 cup vanilla protein powder

  • 1/4 cup sunbutter

  • 1/2 cup almond milk

  • 3/4 cup oat flour

  • 1 cup roasted hazelnuts

  • coating
  • 1 cup chocolate chips

  • 1 tbsp coconut oil

Directions

  • blend the bar ingredients excluding the hazelnuts in a food processor until a thick dough forms.
  • once it’s well-combined, add in the hazelnuts and pulse until they’re chopped and grainy.
  • distribute the bar dough in a parchment lined bread loaf pan and freeze for 2 hours.
  • cut into slices and then coat the bars with melted chocolate and chopped hazelnuts.
  • freeze for another hour and enjoy! store in the freezer in an airtight container and thaw before eating.
