Mini No Bake Banana Cream Protein Pies

Mini No Bake Banana Cream Protein Pies are the perfect treat you don’t have to turn your oven on for!

they’re packed with fiber and minimal ingredients that make you feel good after you eat them.

the base is super delicious and naturally sweetened with medjool dates.

good news- the base is only four ingredients too!

you simply need medjool dates, dessicated coconut, dairy free milk and oats.

then, you can add the base layer to parchment paper muffin cups.

the base layer does not even have to freeze, you can add the cream layer right on top.

as you probably know, i am obsessed with protein in desserts, so you bet i added some here.

while i went with a banana cinnamon flavored protein from truvani, vanilla will work perfectly too!

you could even use chocolate protein since chocolate and bananas are a dream combo.

one and 1/2 overripe bananas comprise the bulk of the banana flavor.

it’s important that they’re ripe enough so the filling is sweet and the banana flavor shines through.

you can use one of the following for the cream component in the filling: vegan whipped cream, coconut cream or thick dairy free yogurt.

coconut cream may be a little heavy, so if you would like, you can use half coconut cream and half yogurt.

for the vegan whipped cream, i used the brand truwhip, which i buy at whole foods.

also, that’s what i used for the creamy topping. any vegan whipped will work though!

i have seen vegan whipped cream options at just about every grocery store :).

oats

dessicated coconut

dairy free milk

banana or vanilla protein powder

bananas

vegan whipped cream/thick yogurt/coconut cream

vanilla extract

Mini No Bake Banana Cream Protein Pies are so easy to make and they are to be stored in the freezer.

before you eat one, just let the mini pie thaw a bit because it will be rock hard from the freezer.

Ingredients

  • base layer
  • 3/4 cup medjool dates

  • 1/2 cup oats

  • 1/3 cup dessicated coconut

  • 1/8 cup dairy free milk (add more if base is too dry)

  • filling
  • 1 and 1/2 overripe bananas

  • 2 scoops banana or vanilla protein powder

  • 1 tsp vanilla extract

  • 1/4 cup dairy free milk

  • 1 cup vegan whipped cream (see text for subs)

  • top with vegan whipped cream

Directions

  • add the base layer ingredients to a food processor and blend until a thick, sticky and grainy consistency forms that is well combined.
  • add to parchment paper muffin cups.
  • blend the filling ingredients in a food processor or blend until the mixture is thick and creamy.
  • pour on top of the base layer and fill to the top.
  • freeze for several hours, top with whipped cream and enjoy.
  • store in the freezer in an airtight container and thaw before eating.
