Ingredients
10 ounces broccoli florets
1 pound pasta of your choosing
14 ounces cubed extra firm tofu
1 cup toasted cashews
1/2 cupped chopped medjool dates
dressing
1/3 cup vegan mayo
1/3 cup vegan plain unsweetened yogurt
1 tbsp minced garlic
1 tbsp curry powder
1 tsp maple syrup
2 tbsp liquid aminos
1/4 cup low sodium vegetable broth
Instructions
preheat the oven to 400 degrees and cook pasta according to package directions.
lightly coat the broccoli and tofu in avocado oil and bake at 400 degrees for 22-25 minutes.
add to a large bowl with the cooked pasta, dates and toasted cashews.
whisk the dressing ingredients together, pour over the pasta salad and mix well. serve room temperate, cold or warm.
store in the fridge in an airtight container.
