it’s cozy season and the only soup you’re going to need this fall is Cozy Vegan Autumn Soup!! it’s perfect in every single way and packs tons of flavor. it’s incredibly healthy but you wouldn’t even know it because Cozy Vegan Autumn Soup is super rich and decadent.
the ingredients are fabulous and there’s a good chance you have most of them in your fridge and pantry.
while i used butternut squash, broccolini, red onions and lacinato kale, you can use just about anything.
instead of butternut squash, any kind of potato would work well!
don’t have kale or aren’t a fan? use spinach, collard greens or any other greens you have on hand.
same with the broccolini! i would choose a cruciferous veggie but again, this recipe is totally versatile.
there are a couple of ingredients in here that you are probably going to be surprised with!
fresh lemon juice and peanut butter!! yes, kind of weird, right? while i have definitely used that combo in sweet recipes, this is novel since it’s savory.
oh man does it work though! wow, the flavor of the soup is completely on point.
there’s just a slight amount of tart and the peanut butter adds necessary nutty undertones to the overall flavor.
the soup gets the creamy factor and color from coconut milk. there’s also turmeric in there, hence the color.
you don’t need coconut milk from a can, that will be too heavy. instead, buy it from a carton at your grocery store.
make sure that it’s plain and unsweetened so you don’t have dessert soup lol.
nowadays, there are so many options, so you shouldn’t have any trouble finding some.
if you don’t want to use coconut, go ahead and use almond milk or any other plain and unsweetened that doesn’t have an overpowering taste.

Cozy Vegan Autumn SoupCourse: Lunch & Dinner, Soups and StewsDifficulty: Easy
3 tbsp extra virgin olive oil
2 cloves minced garlic
1/2 cup chopped onion
1 head broccolini cut into florets
1 cup butternut squash cut into very small cubes
1 bunch lacinato kale (sliced)
1 tsp garlic powder
1 tsp onion powder
1 tsp ground mustard seed
1/2 tsp turmeric
64 ounces veggie broth
3 cups coconut milk
1/3 cup peanut butter
1/3 cup fresh lemon juice
1 cup arborio rice
1/4 cup nutritional yeast
- sauté the onion and garlic, kale, broccolini and butternut squash in olive oil for 3 minutes on medium heat and then add the seasonings and liquids.
- mix well and let that cook for 30 minutes and stir periodically.
- then, add the nutritional yeast, peanut butter and rice.
- cook another 25-27 minutes until the rice is fully cooked and the soup thickens.
- store in the fridge in an airtight container and enjoy!
