Cozy Vegan Apple Cake

it’s cozy, it’s seasonal, it’s all-around absolutely delicious, so you have to try this delicious recipe! while it’s perfect for noshing on during the week, the cake is so pretty and would make a fabulous dessert option for the holiday season.

at this point, i’m not even sure what my favorite part is. it could be the caramelized cinnamon apples on top.

it could also be the light and fluffy, yet somewhat dense cake that’s perfectly baked and flavored with fall.

hmm, i’ll let you decide your favorite part after you try this goodness, and you can let me know :).

so Cozy Vegan Apple Cake is not gluten-free but you’re welcome to try it with gluten-free all purpose flour that’s a 1:1 substitute.

i have not tried making it gluten-free, so i can’t guarantee it will come out as good as my version, especially in terms of texture.

also, as far as other substitutes, i’ll list them later in the post!

the apples on top have to be cooked a bit on the stove top to achieve the level of caramelization that’s ideal.

you just need a few your favorite apples and i recommend either gala or honeycrisp, but any will work!

also, you need vegan butter, cinnamon and maple syrup. these ingredients will create the best caramelized texture, but we don’t want to cook the apples too long.

they only need 8-10 minutes because the apples will also bake in the oven for about 55 minutes, so they will be perfectly tender!

here’s everything you need to make Cozy Vegan Apple Cake

  • all purpose organic unbleached flour

  • baking powder

  • apple juice

  • maple syrup

  • vegan sour cream or yogurt

  • olive oil

  • brown sugar

  • apples

  • vegan butter

  • cinnamon

easy enough right? you probably have a lot of the ingredients in your house already, especially if you love apples!

as far as substitutes, you can sub the vegan butter with coconut oil and the olive oil can be subbed with avocado oil or liquid coconut oil.

also, the apple juice can be subbed with dairy free milk and the vegan yogurt or sour cream with apple sauce or mashed banana.

just keep in mind i have NOT tried these out but based on my baking experience, these subs should be fine :).

Ingredients

  • Cake
  • 1 cup apple juice

  • 1/3 cup maple syrup

  • 1/3 cup sour cream

  • 1/4 cup extra virgin olive oil

  • 1/2 cup brown sugar

  • 1 tsp baking powder

  • 2 cups organic unbleached all purposeΒ flour

  • apples
  • 3 gala or smaller honeycrisp apples cut into small pieces

  • 2 tbsp room temp vegan butter

  • 3 tbsp maple syrup

  • 1 tsp cinnamon

Directions

  • preheat the oven to 350 degrees.
  • mix the wet ingredients in a bowl and then add in the dry ones. combine well until a thick and smooth batter forms and add to a greased 8 x 11 baking pan.
  • add the apples to a pan with the other ingredients and turn the heat onto medium. once the mixture starts to sizzle, cook for about 8 minutes.
  • add the apples to the top of the cake batter and bake at 350 degrees for 55 minutes.
