welcome to almost fall aka the best time of the year. fall last year in florida was actually really nice, although i did miss the fall colors and foliage. however, you will find me making all of the pumpkin recipes including Nourishing Vegan Pumpkin Oatmeal, which is a breakfast dream.
there’s actually no added sugar in this recipe unless you want to add some maple syrup to the finished product like i did, but that’s not necessary.
in fact, the oatmeal is perfectly delicious on it’s own, but i do recommend adding some baked or sautΓ©ed cinnamon apples to the top, yum!

the recipe is as easy as it gets, but this oatmeal does take a little bit longer to cook.
first, i cook the oatmeal on medium low heat for ten minutes, and then turn up the heat to medium.
you will want to pay close attention to the oatmeal and stir it often, especially once you turn up the heat.
20 minutes still isn’t that much and this is a serving for two people by the way.
it also makes a great breakfast for the next day, you can even double the recipe to prep breakfast ahead of time for a few days.

there is a special ingredient in this recipe that i think gives Nourishing Vegan Pumpkin Oatmeal an amazing flavor and compliments the pumpkin so well!
the ingredient is sunbutter or sunflower seed butter. the brand i recommend is sunbutter or Trader Joe’s brand, which tastes the same.
you can use another seed or even nut butter, but i find the sunflower seed butter compliments the other flavors best.
you’re also going to need some pumpkin spice because ya know, it’s just that time of year, yay!

the full ingredient list includes old fashioned oats, pumpkin puree, dairy free milk, vanilla extract, pumpkin spice, sunflower seed butter and water.
yep, that’s it. again feel free to add a sweetener of your choosing! the oatmeal is versatile and there are several add ins that would work well.
also, for the oats, i went with gluten free sprouted ones from one degree organics. you don’t have to use those of course, they’re just one of my favorites.

Nourishing Vegan Pumpkin Oatmeal

1 cup old fashioned oats
1/2 cup pumpkin puree
1 tsp vanilla extract
2 tbsp sunflower seed butter
1 tsp pumpkin spice
2 cups dairy free unsweetened milk
1 cup water
Directions
- add all ingredients to a large pot or pan and bring the oatmeal to a boil. once it starts boiling, cook on medium low heat for 10 minutes and stir frequently.
- then, turn the heat to medium heat and cook an additional 10 minutes while stirring often.
- the oatmeal should be thick and creamy once it’s done. serve warm with your favorite toppings and enjoy!
