peaches and tahini, how was this my first time trying those two together. i was missing out on so much!! the combination is heavenly and even better when combined into oatmeal cups. there is no better breakfast and two of these should keep you full and satisfied!
happy saturday btw!! super glad it’s the weekend, except my hubby has a 24 hour call, yuck. at least he was able to bring a couple of Vegan Peach Tahini Oatmeal Cups with him.
al was really surprised that there was only 1/4 cup coconut sugar used in the recipe! they taste a lot more decadent than they are.
just make sure the peaches you use are ripe and sweet to add a little more!

pro tip that i didn’t follow myself because i was all out- use parchment paper muffin cups!! the oatmeal cups are delicate, so it will be ten times easier to remove them from the tray.
the texture is incredible to say the least. it really is a lot like oatmeal, just more firm and baked through.
the batter has tons of old fashioned oats and a bit of almond flour as the base of the recipe.
tahini is really important because it acts as a binder, and you want to make sure the one you use is runny.

if you’re just not a tahini fan, i can’t say i relate in any way, shape or form, but go ahead and use another runny seed or nut butter.
in terms of texture, i have always found Trader Joe’s and Whole Foods to be on the runnier side and safe bet for that. also, they’re affordable!
next, if you just don’t like peaches (how though?!), then you can definitely use another fruit! i would recommend using another stone fruit though.

- tahini
- coconut sugar
- cinnamon

as far as storing these gems, we keep some in the fridge that we’re going to eat within a day and the rest in the freezer.
the peaches will get kind of soggy, so that’s why i like to store them in the freezer and then just reheat when i want one.
you can serve it with some coconut yogurt like i did and for some extra sweetness, maple syrup would be perfect!

Vegan Peach Tahini Oatmeal Cups

2 cups old fashioned oats
1/3 cup runny tahini
1/4 cup coconut sugar
1/2 cup almond flour
1 cup unsweetened almond milk
1 tsp vanilla extract
1 tsp cinnamon
1 cup peaches cut into small pieces
Directions
- preheat the oven to 350 degrees.
- add all ingredients to a bowl, peaches last and mix well until a thick batter forms.
- place into parchment paper muffin cups (about 1/3) cup in each and bake for 28 minutes.
- allow them to cool down FULLY before you remove from the muffin tins so the cups set. store in the fridge or freezer in an airtight container and enjoy!
