hiii, fellow oatmeal bake lovers!

today, we’re diving into a world of brookie indulgence with a twist of wholesome goodness. i made you Soft-Baked Vegan Brookie Oatmeal!

it’s a treat for your taste buds and a hug for your soul, all in one cozy bake.

i absolutely adore brookies and had a craving for baked oatmeal, therefore, that’s how Soft-Baked Vegan Brookie Oatmeal was created!

yes, it truly does taste like a brookie! you won’t believe once again how simplistic and wholesome the ingredients are yet they create such a rich and velvety bake.

of course the taste and texture are everything BUT, you can make this in just one baking dish!

you don’t even need a mixing bowl, how great is that? i just added all of the ingredients to a 9 x 13 baking dish and mixed them together.

then, i cleaned up the chocolate on the sides but that barely took any effort, ha! this is as minimal effort as it gets and i am here for it.

let’s dive into some of the ingredients!

  • maple syrup: maple syrup brings a touch of sweetness, which is needed to perfectly balance out the cocoa’s richness.
  • vanilla extract: a splash of vanilla extract adds a warm, aromatic note that pulls the flavors together.

the vegan cookie dough topping is an out of this world addition to any dessert, offering a rich, creamy texture with a hint of nuttiness from the almond flour and peanut butter.

its sweetness, derived from maple syrup and vegan chocolate chips, creates a perfect balance of flavors.

this cookie dough is incredibly easy to make, requiring just a few simple ingredients and minimal effort.

the process involves mixing together almond flour, peanut butter, maple syrup, dairy-free milk, vanilla extract, and vegan chocolate chips until a smooth and luscious dough forms.

adjusting the consistency is a breeze, ensuring it’s just right for spreading over the brownie baked oatmeal.

Ingredients


  • 2 cups organic gluten free old fashioned oats
    1/2 cup cocoa powder
    1 tsp baking powder
    1/4 cup runny nut butter (cashew or almond) if yours is not runny add melted coconut oil to create runny texture
    1 cup dairy free yogurt
    1/4 cup maple syrup
    2/3 cup dairy free milk
    1 tsp vanilla extract


  • vegan cookie dough ingredients:
    1 cup almond flour
    1/3 cup oat flour
    1/3 cup creamy peanut butter
    1/4 cup maple syrup
    1-2 tablespoons dairy-free milk (add more if needed)
    1 teaspoon vanilla extract
    1/3 cup vegan chocolate chips

Directions

  • preheat your oven to 350°f (175°c). in a 9 x 13 pan, combine 2 cups of organic gluten-free old-fashioned oats, 1/2 cup of cocoa powder, and 1 tsp of baking powder. add 1/4 cup of runny nut butter (such as cashew or almond). if your nut butter is not runny, melt some coconut oil and add it to the nut butter until you achieve a runny texture.
  • stir in 1 cup of dairy-free yogurt, 1/4 cup of maple syrup, 2/3 cup of dairy-free milk, and 1 tsp of vanilla extract. mix until all ingredients are well combined. bake in the preheated oven for 25 minutes, or until the edges are set and a toothpick inserted into the center comes out clean. remove from the oven and let it cool slightly.
  • in a mixing bowl, combine 1 cup of almond flour, 1/3 cup of oat flour, 1/3 cup of creamy peanut butter, 1/4 cup of maple syrup, 1-2 tablespoons of dairy-free milk (add more if needed for desired consistency), and 1 tsp of vanilla extract.
  • mix until a dough forms. if the dough is too thick, add more dairy-free milk, one tablespoon at a time, until you reach your desired consistency. fold in 1/3 cup of vegan chocolate chips until evenly distributed throughout the dough.
  • once the brownie baked oatmeal base has cooled, spread the vegan cookie dough evenly over the top. use a spatula or your hands to gently spread the cookie dough down onto the oatmeal base, ensuring it adheres well.
  • slice into squares and serve warm for a gooey, indulgent treat, or chill in the refrigerator for a firmer texture. enjoy the delicious combination of chocolatey oatmeal and creamy cookie dough goodness!
