Single Serving Peanut Butter Oatmeal with Strawberries

weekend breakfasts are the best, right!? while oatmeal is a go to every day of the week for the most part, i wanted to give it a little upgrade for the weekend. with creamy peanut butter oats and warm mashed strawberries, you can’t go wrong with this fabulous combo!

there are a million and one ways to make oatmeal, and i love experimenting in the kitchen. this recipe is nothing novel but i wanted to bring a classic back to basics.

there’s no added sugar in the oatmeal or strawberries, but you could totally add a drizzle of maple syrup or some coconut sugar.

the base is incredibly simple and the absolute creamiest! i get so many questions whenever i make oatmeal, especially regarding the creaminess factor.

there a few ways to make your oats extra creamy! you can add some dairy free yogurt, coconut cream, or nut/seed butter.

this recipe has 1.5 tbsp of super creamy, almost runny peanut butter in it. you can always add a little more to the top by the way, but it’s important to use in the oatmeal itself for creaminess.

also, instead of just cooking the oats with water, i think doing half water and half nut or seed milk makes all of the difference in the world!

the oatmeal only takes 7-8 minutes to cook, so you can have a nutrient-packed breakfast made in no time. the best part about Single Serving Peanut Butter Oatmeal and Strawberries is that it will actually keep you full.

i refuse to eat a breakfast that isn’t going to keep me full until lunch time and between the healthy fats and carbs, this recipe absolutely will.

Single Serving Peanut Butter Oatmeal with Strawberries

Ingredients

  • 3/4 cup old fashioned oats

  • 1/2 tsp cinnamon

  • 1/2 tsp vanilla extract

  • 1 and 1/2 tbsp peanut butter

  • 1 cup unsweetened dairy free milk

  • 1 cup water

  • 1/2 cup frozen organic strawberries

Directions

  • add all ingredients but the strawberries to a pan and mix well. once the oatmeal comes to a boil, cook on medium heat for 7-8 minutes and stir very often to avoid sticking/burning.
  • after 7-8 minutes the oatmeal will be done and should be thick and creamy.
  • warm up the strawberries in the microwave or small pan and then mash them.
  • top the oatmeal with the mashed strawberries and more peanut butter if you would like and enjoy!
