Dairy-Free Strawberries and Cream Oatmeal

strawberries and cream is one of my top favorite combos, especially when the weather gets warmer and flowers bloom. what better than to make this classic duo into an oatmeal recipe?! Dairy-Free Strawberries and Cream Oatmeal is made in a matter of minutes with real and delicious flavors.

oatmeal is my forever go-to breakfast since i can tailor the flavors to whatever i want, it’s filling and well, SO YUM.

this take on oatmeal is packed with sprouted organic oats (i buy one degree organics), coconut cream, fresh strawberries, strawberry jam and more.

it’s that kind of breakfast that feels so indulgent but it’s really not! the strawberry jam adds a necessary sweet component in my opinion. you can add one or two tbsp!

if that’s not sweet enough for you, maple syrup would be a great addition or a little bit of coconut sugar.

i would start out with 1 tbsp of jam and then add on from there depending on the taste.

ah, sooo how is the oatmeal light pink?! we’re actually going to blend the fresh strawberries, strawberry jam, coconut cream and dairy free milk in a blender before adding the liquid.

that creates this delicious strawberry milk to cook the oats in!

you’re also going to need water but all of the flavor is coming from the strawberry milk.

as aforementioned, do a taste test of the strawberry milk and add more jam or a sweetener accordingly!

here’s a list of everything you need for Dairy-Free Strawberries and Cream Oatmeal!

  • oats (used one degree organics sprouted and GF oats)

  • strawberries

  • strawberry jam

  • shredded coconut

  • coconut cream

  • almond extract

  • dairy free unsweetened milk

  • water

  • vegan whipped cream for topping (used silk heavy whipping cream alternative) but coconut cream works too!

the oatmeal only takes about 8-9 minutes to cook on medium heat but it’s important you monitor the oatmeal closely and stir very often.

this will prevent sticking/burning to the bottom of the pan and ensure a creamy outcome.

Dairy-Free Strawberries and Cream Oatmeal

Ingredients

  • strawberry milk
  • 1 cup fresh strawberries (the sweeter the better)

  • 1-2 tbsp strawberry jam or preserves

  • 2 tbsp coconut cream

  • 1 cup dairy free plain unsweetened milk

  • 1/4 tsp almond or vanilla extract

  • oats
  • 1 and 1/3 cup oats

  • 1 and 1/2 cups water

  • 1/4 cup shredded coconut

Directions

  • blend the strawberry milk ingredients in a blender until a watery consistency forms.
  • add the oats, 1 cup of water and shredded coconut to a pot. then, pour the strawberry milk in too and mix well.
  • cook on medium heat for 7-8 minutes or until the oatmeal is creamy and liquid is mostly absorbed. also, be sure to stir very frequently. then, at the end, add the last 1/2 cup water and cook another minute.
  • top with vegan whipped cream, more strawberries or whatever you want and enjoy!
