Baked Chocolate Chip Protein Oats

another day another recipe with chocolate chips and let me tell ya, i am here for it. this recipe is the best breakfast for days that you just want to treat yourself a bit. sometimes cereal and avocado toast gets boring, so give Baked Chocolate Chip Protein Oats a try because it’s simply delicious.

the recipe is just fabulous AND we’re using a blender y’all! ah, my absolute favorite, less of a mess and the easiest of recipes.

you don’t even need flour for this recipe, instead you’re going to use oats! i used one degree organic sprouted gluten free oats and they’re old fashioned.

you don’t have to use sprouted or anything, i just really love that brand.

you probably saw the reel i made for Baked Chocolate Chip Protein Oats and it shows you the easy step by step process.

you can just legit throw everything in the blender! then, you can add some chocolate chips or really whatever you want!

when it comes to add in options, i recommend blueberries, chocolate chips, banana pieces or maybe some walnuts. anything is going to work though!

there’s no additional sweetener added to the recipe unless your protein powder has some.

of course the chocolate chips are sweetened but the base itself doesn’t have maple syrup or anything. if you want, you can add a tbsp of coconut sugar and that shouldn’t change the texture.

the ingredient list is short and simple, here’s everything you need!

  • old fashioned oats (see above for what i used)

  • vanilla protein powder (used garden of life)

  • sunflower seed butter or any creamy nut/seed butter

  • dairy free milk

  • cinnamon

  • almond extract

  • coconut yogurt (used kite hill coconut)

  • chocolate chips

to bake the Baked Chocolate Chip Protein Oats, i used a single serving size ramekin, so this recipe is only meant for one.

you could also probably turn this into a giant cookie, but the batter is on the wetter side just to let you know. the baking time wouldn’t be as long either.

to bake the oats in the ramekin, i baked at 350 degrees for 28 minutes. the texture is PERFECT. it’s soft and a little fudgy but baked through enough.

Ingredients

  • 1 cup old fashioned oats

  • 1 scoop vanilla protein powder

  • 1/4 cup coconut yogurt

  • 1/2 tsp cinnamon

  • 1 tsp vanilla extract

  • 1 and 1/2 tbsp sunbutter

  • 3/4 cup dairy free milk

  • 1/4 cup chocolate chips (or more)

Directions

  • preheat the oven to 350 degrees.
  • add all ingredients but the chocolate chips to a blender and blend until a smooth batter forms.
  • then, fold in the chocolate chips, transfer to an oven safe ramekin and bake at 350 for 28 minutes.
  • enjoy!
