Cozy Lemon Blueberry Cake Oatmeal

it’s the WEEKEND YAY. well it starts super soon anyway. are you looking for a nourishing Valentine’s Day breakfast, or just an amazing breakfast in general? look no further than Cozy Lemon Blueberry Cake Oatmeal.

it’s good for your mind, body and soul and yes…it tastes like cake! there’s two tbsp of maple syrup, which is plenty for my tastebuds, but go ahead and add more (or less) if desired.

lemon blueberry is such a classic and wonderful combination. the tartness of the lemon and bluebs just work incredibly well together.

i’ve made lemon blueberry cakes, muffins and more, but this is my first oatmeal recipe on the blog, yay! honestly, it feels rich enough to actually be dessert but….breakfast! isn’t that the best?

i adore the colors too! the pretty purple that comes from melty frozen blueberries and coconut cream is just divine.

whenever you see my oatmeal or toast topped with blueberries that are a vibrant purple, it’s because i mixed them with either coconut cream, yogurt or cream cheese.

if you do want to leave blueberries out altogether, go for it, the lemon flavor is wonderful on it’s own. also, you could use strawberries or raspberries on top!

check out my video below! i show you the process of making the oatmeal, except the actual cooking on the stove part.

just make sure that you stir very often to avoid sticking/burning on the bottom of the pan. the oatmeal only takes 7 minutes to cook on medium heat, so it’s best to stay and stir often.

it may sound kind of a hassle, but with only 7 minutes total and the most amazing outcome, it’s not too bad!

  • old fashioned oats

  • almond milk or dairy free milk

  • vanilla extract

  • water

  • maple syrup

  • fresh lemons

  • coconut cream or full fat coconut milk

  • almond butter

  • frozen blueberries

this recipe will serve one or two! depends on how hungry you are! with added toppings, there’s enough for two πŸ™‚

Ingredients

  • 1 cup old fashioned oats

  • 1 cup unsweetened almond milk

  • 1/2 tsp vanilla extract

  • 2 tbsp maple syrup

  • 2 tbsp coconut cream

  • 2 tbsp almond butter

  • juice of 1.5 small lemons

  • 1 cup water

  • frozen and thawed blueberries for topping

Directions

  • add all ingredients to a large pot and cook on medium heat for 7 minutes or until thick.
  • stir very often to avoid sticking or burning.
  • top with blueberries and whatever else you like and enjoy!
