while i adore my chocolate and peanut butter desserts, i’m also a HUGE fan of lemon, especially in the summertime. while sorbets and such aren’t my thing, lemon cakes and cookies with vanilla frosting totally are! my Vegan Mini Lemon Cakes are beyond scrumptious, easy to make and the best dessert for the fam!
if you’re not feeding four people, looks like you have leftover cakes for the next month that you can store in the freezer.
that sounds pretty ideal to me!! oh gosh, where do i start with these citrus gems?

the base is made with a combination of oat and almond flour, which you may or may not have already guessed.
the texture is a fabulous hybrid of dense and fluffy. the cakes are a little bit spongey too, which is ideal in my opinion.
honestly, everything about the cake is amazing. from the texture to the taste and the easy process to make them!
Vegan Mini Lemon Cakes honestly taste like the lemon Girl Scout cookies, which were one of my faves growing up. basically, if you’re a fan of lemon, this recipe is for you.

took a shortcut with the frosting because i simply didn’t feel like making my own. i’ve always been perfectly content with simple mills vanilla frosting.
in my opinion, the cakes need a frosting or at least a glaze with some sweetness to it.
there’s both coconut sugar and maple syrup in the cakes, but there’s a great balance of flavor with the tart lemon.
i did add quite a generous amount too with 1/2 cup fresh lemon juice. please use fresh if you can in the recipe, it makes such a huge difference.

if you’re wondering if you can make one large cake, the answer is yes but you’re going to have to monitor the baking time closely.
the mini cakes bake at 350 degrees for 35 minutes, so i recommend setting your timer for that and then see if a toothpick comes out clean.
if not, add on a little bit of time but i can’t tell you how much because i have only made them in the ramekins.

Vegan Mini Lemon Cakes

1 cup oat flour
1 cup almond flour
1/2 tbsp baking powder
1/2 cup coconut sugar
1/2 cup fresh lemon juice
1/2 cup dairy free milk
1/2 cup coconut yogurt
1/2 tbsp apple cider vinegar
1/4 cup maple syrup
- store bought vanilla frosting
Directions
- preheat the oven to 350 degrees. mix all dry ingredients in a bowl and then add in the wet ones.
- add to lightly greased ramekins about 3/4 way full with the batter and bake for 35 minutes.
- let the cakes cool down completely and then add the frosting.
- store in the fridge or freezer in an airtight container and enjoy!
