Delicious Vegan Lemon Poppyseed Muffins

aaaah hello spring recipes!! please welcome my Delicious Vegan Lemon Poppyseed Muffins. they’re refreshing, super minimal and have the best flavor ever! super thrilled with how these muffins turned out.

it took me two tries to perfect these gems and it was worth it. with a couple of subtle tweaks, i know have the ultimate lemon poppyseed muffins for you.

they’re light and fluffy yet still a little bit dense, just the way i like em! you’re going to be thrilled with how easy it is to make them because we all love a hassle-free recipe, right!?

oat flour and almond flour honestly make the best muffins ever. they’re my favorite two flours to use together. why?

the perfect balance of carbs and healthy fats, which produces such a great texture.

when it comes to subs, ya know the drill right?! sub at your own risk my friends because this is the only version i have tried.

however, i can tell you right away that coconut flour would be the worst flour to replace either with, just a heads up!

so, what’s all in Delicious Vegan Lemon Poppyseed Muffins?!

  • almond flour

  • oat flour

  • baking powder

  • vanilla extract

  • coconut yogurt

  • lemon juice

  • maple syrup

  • poppyseeds

easy enough, right? also, that beautiful glaze on the top, that’s just kite hill coconut yogurt. i did not sweeten mine but you could totally add 1 or 2 tbsp of maple syrup!

additionally, you could make these DECADENT! ya know, vanilla frosting and all, yum. at that point, we can just call them cupcakes. simple mills frosting would be amazing.

check out the video i made below! it’s actually a reel but ya know, it helps seeing the process and all. you can just throw everything in a bowl for these muffins and mix until a thick batter forms.

after they come out of the oven and cool down, just add the glaze or frosting

storing the muffins

store them in either an airtight container in the fridge or you can store them in the freezer! i like to store a few in the fridge to eat and the rest go in the freezer.

Delicious Vegan Lemon Poppyseed Muffins

Cooking time




  • 1 cup oat flour

  • 1 cup almond flour

  • 1 tsp baking powder

  • 1 tbsp vanilla extract

  • 1/2 cup coconut yogurt (see text for brand)

  • 1/3 cup maple syrup

  • 1/3 cup lemon juice

  • 2.5 tbsp poppyseeds

  • coconut yogurt for topping


  • preheat oven to 350 degrees.
  • add all ingredients to a bowl and mix until a thick batter forms. place in parchment paper muffin cups and bake at 350 degrees for 23-25 minutes. mine were small-medium size.
  • let the muffins cool down completely so they set (super important) and then top with coconut yogurt or frosting.
  • store in the freezer or fridge in an airtight container.
