Healthy Vegan Pb and J Oat Bars

happy tuesday babes! here is my newest recipe, Healthy Vegan Pb and J Oat Bars :). they’re amazingly delicious and made with zero added sugar, yay! many of y’all seem to love when i made no added sugar recipes and these bars are perfect.

the bars are sweetened with dates, applesauce and maybe ever so slightly from the raspberries, but the ones i used were kind of tart.

if this is not enough sweetness for you, i recommend drizzling some maple syrup on top after the bars are done baking and before you serve them.

that should do the trick! also, i recommend serving them with some vegan cream cheese on top, it’s such a great combo.

so the raspberry part of the bars, that’s just raspberries and a little bit of cinnamon! nothing else, which is so cool.

you will need fresh raspberries for this but if you’re not a fan of raspberries, i think blackberries or even strawberries would be your next best option.

the topping is the same as the crust! i used about 3/4 of the dough for the crust and crumbled the remainder on top.

per the title, peanut butter plays a big part in these Healthy Vegan Pb and J Oat Bars. if you don’t like peanut butter or can’t have it, you can sub!

the best subs would be almond butter, cashew butter or sunflower seed butter.

also, there’s almonds in the crust/topping, so if you want to use seeds instead, that should be totally fine!

i recommend that you substitute with sunflower seeds and you can always add a little more than what the recipe calls for to make up for the bulk of the almonds.

also, make sure the almonds you’re using are raw!

the recipe is super simple, and here’s the ingredients you need to make Healthy Vegan Pb and J Oat Bars

  • old fashioned oats

  • medjool dates

  • raw almonds

  • peanut butter

  • applesauce

  • vanilla extract

  • coconut cream

  • mashed raspberries

  • cinnamon

also, further good news- you make the crust/topping in the food processor. yes, it’s that easy!

the only other thing you need is a bowl to mash the fresh raspberries, sounds like a piece of cake, right?

Healthy Vegan Pb and J Oat Bars

Ingredients

Crust + topping

  • 2 cups old fashioned oats

  • 7 pitted medjool dates

  • 1/2 cup raw almonds

  • 1/2 cup creamy peanut butter

  • 1/3 cup unsweetened applesauce

  • 1/3 cup coconut cream

  • 12 ounces mashed raspberries
  • 1/2 tsp cinnamon

Directions

  • preheat the oven to 350 degrees.
  • add the crust/topping ingredients to a food processor and blend until a thick, dough-y consistency.
  • press down 3/4 of the dough into a greased 8 x 11 baking tray and evenly distribute. mash the raspberries and cinnamon, and spread out the mashed raspberries on top of the crust.
  • crumble the remaining dough on top and bake at 350 for 25 minutes.
  • store in the fridge or freezer in an airtight container and enjoy!
