while i love all of my recipes, Double Chocolate Brownie Zucchini Bread is really on it’s own level. i mean, who would even know there’s veggies in this!? it’s fudgy, much better for you and made with the yummiest ingredients. i can always get on board with double chocolate and the zucchini is an added bonus.

it would be perfect for Sunday meal prep! you can store some in the fridge and the rest in the freezer to have a healthier, yummy snack or dessert on hand throughout the week.

lots of requests for oat flour recipes and i’m always happy to make whatever y’all want! this recipe is only made with oat flour, no almond!

i do recommend purchasing oat flour from the store if possible because it is finer than when you make your own. this is important when it comes to texture, especially for baked goods.

you’re going to need both cocoa powder and chocolate chips because ya know, double chocolate, which is always a good thing.

here’s a pro tip for you- instead of grating the zucchini, slice it and put it in the food processor! blend on high until it’s super grainy and yay, much easier than manually doing it!

you’re going to want to get rid of excess water, so you can either use a cheese cloth or even paper towels to squeeze out the water.

get rid of as much as you can and then you mix it with the wet ingredients first before adding in the dry ones. the key here is to add 1/4 cup of oat flour at a time, stir, add, etc.

this recipe does have chocolate chips added to the batter because i mean, they are amazing. if you want to omit them, go for it!

the frosting is something that i completely winged and don’t really have a recipe for. i think some melted chocolate like a ganache would be delicious or store bought chocolate frosting like simple mills.

to make this recipe completely gluten-free, just make sure the brand of oat flour you’re using is!

Double Chocolate Brownie Zucchini Bread

Ingredients

  • 1 cup grated zucchini (squeeze out excess water- see text for how)

  • 1/2 cup very creamy almond butter

  • 1/2 cup maple syrup

  • 1 tbsp vanilla extract

  • 1 tsp acv

  • 1/2 cup coconut yogurt (used kite hill brand)

  • 1 flax egg (1 tbsp flax meal + 3 tbsp water)

  • 1 and 1/4 cup oat flour

  • 1/3 cup cocoa powder

  • 1 tsp baking powder

  • 1/2 cup chocolate chips

  • chocolate frosting for topping if wanted!

Directions

  • preheat the oven to 350 degrees. see text for how to grate zucchini in food processor and squeeze out excess water.
  • then add to a bowl with all of the wet ingredients and mix well.
  • add in the dry ingredients and add 1/4 cup of oat flour at a time and mix the batter each time you add it.
  • the batter should be really thick! add to a bread loaf pan and bake at 350 degrees for one hour.
  • let the bread cool completely and enjoy!
