Ingredients
1 cup grated zucchini (squeeze out excess water- see text for how)
1/2 cup very creamy almond butter
1/2 cup maple syrup
1 tbsp vanilla extract
1 tsp acv
1/2 cup coconut yogurt (used kite hill brand)
1 flax egg (1 tbsp flax meal + 3 tbsp water)
1 and 1/4 cup oat flour
1/3 cup cocoa powder
1 tsp baking powder
1/2 cup chocolate chips
chocolate frosting for topping if wanted!
Instructions
preheat the oven to 350 degrees. see text for how to grate zucchini in food processor and squeeze out excess water.
then add to a bowl with all of the wet ingredients and mix well.
add in the dry ingredients and add 1/4 cup of oat flour at a time and mix the batter each time you add it.
the batter should be really thick! add to a bread loaf pan and bake at 350 degrees for one hour.
let the bread cool completely and enjoy!
