The goal with this recipe was to create a healthier pistachio cake that still tastes and feels like actual cake!! I wanted a tender, fluffy crumb rather than something dense, gummy or obviously “healthy.”
The secret is grinding whole pistachios into an ultra-fine meal and combining them with gluten-free 1:1 flour and a little cornstarch. The pistachios bring natural richness and that unmistakable nutty flavor, while the flour and cornstarch help create a lighter, more traditional cake texture.
Greek yogurt and melted butter keep everything moist, while maple syrup and just two tablespoons of coconut sugar provide the sweetness. I love finishing the cake with a pistachio drizzle and some chopped pistachios, but the topping is completely optional.

Real Pistachios Make All the Difference
Instead of simply adding chopped pistachios to the batter, we’re turning them into one of the main components of the cake.
Whole shelled pistachios are pulsed in a food processor until they’re super fine and almost flour-like. This distributes the pistachio flavor throughout every bite while the natural fats in the nuts contribute richness and moisture.
The important part is knowing when to stop processing. Once the pistachios resemble a fine nut meal, they’re ready. If you continue processing for too long, the natural oils will release and you’ll start making pistachio butter instead.
A small amount of almond extract is optional, but I highly recommend it. You only need a tiny amount to enhance that classic pistachio dessert flavor without making the cake taste overwhelmingly like almond.
How This Healthier Cake Still Tastes Like Cake
When I make a healthier dessert, I still want it to taste like dessert. Especially with cake, texture is everything.
That’s why I didn’t make this entirely from nut flour or oat flour. Gluten-free 1:1 baking flour provides the structure we need for a more traditional crumb, while a couple tablespoons of cornstarch help keep it tender and light.
We’re also using real melted butter. You don’t need a huge amount because pistachios already contain natural fats, but a little butter gives the cake that richness and soft mouthfeel you expect from a traditional cake.
Greek yogurt adds even more moisture and tenderness, while eggs give the cake structure and lift.
The result is a healthier gluten-free pistachio cake that is soft, moist and fluffy rather than heavy or gummy.
Maple Syrup AND Coconut Sugar!
Most of the sweetness comes from pure maple syrup, but I also add a small amount of coconut sugar.
Using just two tablespoons of coconut sugar helps with the cake’s structure, flavor and browning while keeping maple syrup as the primary sweetener.
The cake itself isn’t intended to be overwhelmingly sweet, especially if you plan on adding pistachio cream or another sweet topping. You get a lightly sweet, nutty cake with the option to make it more decadent depending on how you finish it.
Optional Pistachio Drizzle
For the cake pictured, I love the idea of finishing it with a store-bought pistachio cream or pistachio drizzle. It makes the pistachio flavor even more pronounced and gives the cake a beautiful bakery-style finish.
However, the pistachio topping is completely optional and is not included in the nutrition information.
Store-bought pistachio creams can vary significantly in ingredients and nutrition, so keeping it separate also makes it easier for you to use whichever topping you prefer.
Other Topping Ideas
You definitely don’t need pistachio cream to make this cake delicious. Try topping it with:
- Honey
- Finely chopped pistachios
- Greek yogurt frosting
- Cream cheese frosting
- Whipped cream
- Coconut whipped cream
- Melted white chocolate
- A simple maple glaze
- Fresh berries
You can also leave it completely plain. The cake itself has plenty of pistachio flavor and is especially good alongside coffee or tea.
For a really pretty presentation, I love honey & a thin pistachio drizzle followed by finely chopped pistachios around the top.
Can I Use 0% Greek Yogurt?
Yes! While I prefer 2% or 5% Greek yogurt for the richest cake, 0% Greek yogurt can be used.
Between the melted butter and the natural fats from the ground pistachios, there is already enough richness in the recipe that using nonfat Greek yogurt shouldn’t leave you with a dry cake.
Can I Make It Dairy-Free?
Yes. Substitute a thick dairy-free yogurt for the Greek yogurt, dairy-free butter for the regular butter and your favorite dairy-free milk.
Try to choose a dairy-free yogurt with a thick consistency similar to Greek yogurt rather than a thin traditional yogurt.
Tips for the Best Gluten-Free Pistachio Cake
Don’t turn the pistachios into pistachio butter. Pulse them just until they’re very finely ground and flour-like.
Use gluten-free 1:1 baking flour. This is important for achieving the more traditional cake texture we’re going for.
Don’t skip the cornstarch. It helps lighten and soften the crumb.
Don’t overmix your batter. Mix just until everything is incorporated for the softest texture.
Don’t overbake. This is one of the easiest ways to turn a moist gluten-free cake into a dry one. Start checking the cake around the 40-minute mark.
Cool before topping. Allow the cake to cool completely before adding pistachio cream, frosting or glaze.
How to Store Healthier Gluten-Free Pistachio Cake
Store the plain cake in an airtight container at room temperature for about 1–2 days or in the refrigerator for up to 5 days.
If you add a topping that requires refrigeration, such as Greek yogurt frosting or cream cheese frosting, keep the finished cake refrigerated.
For the softest texture, let a refrigerated slice sit at room temperature for a little while before eating.
Can You Freeze Pistachio Cake?
Yes. I recommend freezing the cake without the topping.
Once completely cooled, cut the cake into individual slices and wrap them well before transferring to a freezer-safe container. Freeze for up to 2–3 months.
Thaw individual slices at room temperature or overnight in the refrigerator, then add your desired topping before serving.
Healthier Gluten-Free Pistachio Cake

- Preheat the oven to 350°F. Grease an 8-inch round cake pan and line the bottom with parchment paper.
- Add the pistachios to a food processor and pulse until very finely ground into an almost flour-like meal. Don’t over-process or the pistachios will begin turning into pistachio butter.
- In a medium bowl, whisk together the ground pistachios, gluten-free flour, cornstarch, baking powder, baking soda, spice and sea salt.
- In a separate large bowl, whisk together the eggs, maple syrup, coconut sugar, Greek yogurt, melted butter, milk, vanilla extract and almond extract until smooth.
- Add the dry ingredients to the wet ingredients and fold together until just combined. Don’t overmix.
- Pour the batter into the prepared cake pan and spread into an even layer.
- Bake for 40-45 minutes (mine baked 45). Start checking around 38-40 minutes. The cake is done when the center is set and a toothpick inserted into the middle comes out clean or with a few moist crumbs.
- Cool in the pan for about 15 minutes before carefully transferring the cake to a cooling rack.
- Cool completely before adding pistachio drizzle or your desired topping. Cut into 8 slices and serve.
