Ingredients
  

  • 1 1/2 lbs Pacific salmon fillets or salmon of choice
  • 8 oz block feta cheese
  • 2 pints cherry or grape tomatoes
  • 1 small red onion thinly sliced
  • 3 tbsp avocado oil divided
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1/2 tsp sea salt or to taste
  • Black pepper to taste
  • 12 oz pasta of choice
  • Zest of 1 large lemon
  • 3 –4 tbsp fresh lemon juice or more to taste
  • 1/2 cup finely chopped fresh parsley
  • Optional: crushed red pepper flakes
  • Optional: a splash of reserved pasta water only if needed

Method
 

  1. Preheat the oven to 400°F. Place the feta in the center of a 9×13-inch baking dish and arrange the tomatoes and red onion around it.
  2. Drizzle the feta and vegetables with 2 tbsp avocado oil. Season with the garlic powder, onion powder, oregano, salt and black pepper. Bake for 15 minutes.
  3. Remove the dish from the oven and nestle the salmon fillets around the feta and vegetables. Drizzle the salmon with the remaining 1 tbsp avocado oil and season with a little additional salt and pepper if desired.
  4. Return to the oven and bake for another 12–15 minutes, or until the salmon is cooked through and flakes easily.
  5. Meanwhile, cook the pasta according to package directions until al dente. Drain. You can reserve a little pasta water just in case, but don’t add it unless the sauce needs it.
  6. Add the lemon zest and lemon juice to the baking dish. Mash the softened feta and roasted tomatoes together until creamy, then gently break the salmon into bite-sized flakes.
  7. Add the cooked pasta and fresh parsley and toss until everything is well coated. If the sauce seems too thick, add a small splash of reserved pasta water. Otherwise, there’s no need for it.
  8. Taste and add more lemon juice, parsley, black pepper or red pepper flakes as desired. Serve warm.
