Refreshing and Light Vegan Watermelon Feta SaladCourse: Lunch u0026amp; Dinner, Salads
6-8 servings depending on portion sizes
4 cups cubed watermelon
2 and 1/2 cups sliced cucumber
1/2 cup sliced red onion
1 and 1/2 cups cubed mango
8 ounces crumbled vegan feta (used violife)
2 handfuls basil (sliced)
- 1/4 cup extra virgin olive oil
- very generous drizzle of balsamic glaze (used store-bought)
- add all salad ingredients to a large mixing bowl.
- drizzle with extra virgin olive oil and mix well.
- then, drizzle with balsamic glaze on top and serve! store in the fridge in an airtight container.
