but what if you could enjoy that same nostalgic flavor in a version that’s not only vegan and gluten-free but also made with healthier ingredients?

the ingredients:

we’ve taken the classic recipe and given it a healthy makeover.

instead of traditional flour, we use a blend of almond flour and certified gluten-free oat flour.

almond flour adds a nutty richness and a dose of healthy fats, while oat flour provides a delicate texture and plenty of fiber.

our cookies are sweetened with coconut sugar and maple syrup, which together are a dream team.

we use runny peanut butter for that signature nutty taste, and dairy-free milk to bring it all together.

almond flour is rich in vitamin e, magnesium, and protein, while oat flour is high in fiber and can help lower cholesterol levels.

how to make them:

making these cookies is a breeze. simply mix together the almond flour, oat flour, runny peanut butter, coconut sugar, maple syrup, and dairy-free milk until well combined.

roll the dough into balls, flatten them with your palm, and mark the outside with a fork for that classic nutter butter look.

then bake them in a preheated oven at 350°f for 15-17 minutes, until golden brown.

Ingredients

  • cookies:
    1 cup almond flour
    1/3 cup gluten-free oat flour
    1/3 cup runny peanut butter (if not runny, mix with a little warm melted coconut oil until runny)
    1/4 cup coconut sugar
    1/2 tsp cinnamon
    2 tbsp maple syrup
    2 tbsp dairy-free milk

    filling:
    1/2 cup dairy-free cream cheese
    1/4 cup peanut butter
    1 tbsp maple syrup
    1/2 tsp vanilla extract

Directions

  • preheat the oven to 350°f (175°c). line a baking sheet with parchment paper.


  • in a mixing bowl, combine almond flour, oat flour, runny peanut butter, coconut sugar, maple syrup, and dairy-free milk. mix until well combined to form the cookie dough.


  • roll the dough into small balls and place them on the prepared baking sheet. flatten each ball slightly with your palm and then use a fork to create the classic nutter butter mark on the outside.


  • bake the cookies in the preheated oven for 15-17 minutes, or until they are golden brown around the edges. the baking time may vary depending on the size and thickness of the cookies.


  • while the cookies are baking, prepare the filling. in a separate bowl, mix dairy-free cream cheese, peanut butter, maple syrup, and vanilla extract until smooth and well combined.


  • once the cookies are baked, remove them from the oven and allow them to cool completely on a wire rack.


  • once the cookies have cooled, add a generous dollop of the prepared filling to the center of each cookie.


  • serve and enjoy your small batch vegan and gluten-free healthy nutter butter cookies!
