cookies: 1 cup almond flour 1/3 cup gluten-free oat flour 1/3 cup runny peanut butter (if not runny, mix with a little warm melted coconut oil until runny) 1/4 cup coconut sugar 1/2 tsp cinnamon 2 tbsp maple syrup 2 tbsp dairy-free milk filling: 1/2 cup dairy-free cream cheese 1/4 cup peanut butter 1 tbsp maple syrup 1/2 tsp vanilla extract
Instructions
preheat the oven to 350°f (175°c). line a baking sheet with parchment paper.
in a mixing bowl, combine almond flour, oat flour, runny peanut butter, coconut sugar, maple syrup, and dairy-free milk. mix until well combined to form the cookie dough.
roll the dough into small balls and place them on the prepared baking sheet. flatten each ball slightly with your palm and then use a fork to create the classic nutter butter mark on the outside.
bake the cookies in the preheated oven for 15-17 minutes, or until they are golden brown around the edges. the baking time may vary depending on the size and thickness of the cookies.
while the cookies are baking, prepare the filling. in a separate bowl, mix dairy-free cream cheese, peanut butter, maple syrup, and vanilla extract until smooth and well combined.
once the cookies are baked, remove them from the oven and allow them to cool completely on a wire rack.
once the cookies have cooled, add a generous dollop of the prepared filling to the center of each cookie.
