it has been what, like two days since i posted something seasonal lol, so i had to. oh, and i waited for a good one because Healthier Mini Vegan Pumpkin Spice Cupcakes are little bites of heaven! they’re made with incredible ingredients, have bold flavors and a scrumptious taste, so you must make!
happy wednesday! we love a midweek treat, am i right? Healthier Mini Vegan Pumpkin Spice Cupcakes are the perfect thing to whip up in the kitchen.
the recipe is easy and they’re done baking within 16-17 minutes.
that may sound a little long for mini muffins/cupcakes, and it kind of is! but remember, there’s no eggs in these gems and only one cup of flour total!
i am new to the mini muffin/cupcake crew and actually JUST bought a mini muffin/cupcake pan. if you don’t have one, you can absolutely make these into larger Cupcakes.
since i’m not sure what the baking time will be, start with 22 minutes at 350 and monitor them from there!
so, as you can see there’s frosting on top and this time around, i did not make my own.
IF you would like to keep these on the light side, just omit it altogether. then, they’re technically muffins right?
the store-bought brand i used is Miss Jones Baking and another great brand is simple mills!
you can always make your own and i also have some frosting recipes! recently, i made a really yummy homemade buttercream one with banana cake.

- almond flour
- oat flour
- pumpkin puree
- maple syrup
- almond milk
- baking powder

Healthier Mini Vegan Pumpkin Spice CupcakesCourse: Cupcakes, DessertsDifficulty: Easy
14-16 mini Cupcakes
1/2 cup oat flour
1/2 cup almond flour
1 tsp baking powder
1/3 cup creamy almond butter
1/3 cup pumpkin puree
1/3 cup maple syrup
1/3 cup dairy free milk
1 tsp vanilla bean paste
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
- store bought vanilla frosting (see text for brands)
- preheat the oven to 350 degrees.
- mix the wet ingredients in a large bowl and then add in the dry ones. combine well until the mixture is smooth.
- place about one heaping tbsp full in mini muffin/cupcake parchment cups and bake at 350 degrees for 15-17 minutes. slight time variation will depend on size.
- let the cupcakes cool completely before you frost them and enjoy!
YUM these are soooo good! I made these for a dinner party tonight and frosted them with Simple Mills vanilla frosting, and they were a HUGE hit. The texture is soooo spot on. I used a salted peanut butter instead of the almond butter too, and the peanut with the pumpkin spice really hits. Thank you so much for the recipe!
