Vegan Banana Pumpkin S’mores Bread

when you think of some of the greatest desserts, what comes to mind? for me, banana, pumpkin, chocolate and marshmallows are all key dessert words that pop up in my mind. so what do we do with that? Vegan Banana Pumpkin S’mores Bread!! it’s glorious, easy to make, requires simple ingredients found at almost any grocery store, and it’s just the coziest treat to snuggle up with at the end of the day. btw, this is a soft yet dense bread! it’s kind of fudgy in the middle, which i know most people love but if you’re not a fan, just a heads up :).

the banana bread layer has no added sugar but of course the marshmallows do! you can absolutely used unsweetened chocolate chips and omit the marshmallows if you’re looking to keep it as low sugar as possible but in my opinion, the marshmallows make this recipe extra special.

the news keeps getting better! you make Vegan Banana Pumpkin S’mores Bread in a food processor and ya don’t even need flour, just oats! yay for less of a mess and effort haha! when it comes to the chocolate and marshmallow layer, well, ya basically dump a ton of chocolate chips on top of the banana pumpkin bread batter and then top it all off with lots of marshmallows. i used dandies, which are vegan!

Vegan Banana Pumpkin S’mores Bread

Ingredients

  • 3 medium-large size very ripe bananas

  • 1/2 cup pumpkin purée 

  • 1/3 cup creamy almond butter

  • 1/2 cup almond milk 

  • 1 tsp baking powder

  • 1/2 tsp pumpkin spice

  • 2 cups oats

  • 4 tbsp flax meal

  • toppings
  • chocolate chips

  • small marshmallows

Directions

  • add all bread ingredients to a food processor and blend until a batter forms. the batter should be a tiny bit grainy, but blend it as smooth as you can.
  • then, add to a parchment lined bread loaf pan. top with chocolate chips- i completely covered the batter with them. next, add a layer of marshmallows to the top.
  • bake at 350 degrees for 45 minutes.
  • cool down completely so the bread can set and then enjoy!!
