Vegan and Gluten-Free Banana Cookie Cake is the perfect way to start the weekend! everyone will love this fun recipe that’s completely plant-based, gluten-free, packed with flavor and super easy to make.
think banana bread but ya know, with a little bit of an upgrade.
while the texture is similar to banana bread, it’s also dense and tastes a little more decadent, thanks to coconut sugar.

then there’s the chocolate chips and frosting that take this recipe completely over the top.
the frosting is optional, but if you’re looking to lighten up the recipe a little bit, you can just omit it because the banana cookie cake is fabulous without it too.
idk though, cookie cake isn’t really cookie cake without a frosting. this one is really easy too!
you just need your favorite vegan cream cheese, some chocolate chips melted with vegan butter or coconut oil and powdered sugar.


the frosting will be little bit on the runny side after you mix everything together thanks to the warm and melted chocolate chips, but just pop it in the fridge to harden.
don’t leave it in there too long though, because it can turn rock solid thanks to the coconut oil in the vegan butter and chocolate chips!
when it came to frosting the cookie cake, i truly had ZERO and i mean zero patience.
you may have not even noticed, but if the frosting is looking a little melty to you, that’s why lol.

what can i say, i was very hungry and eager to dig in. ya gota do what ya gota do sometimes IYKYK.
it was worth it though, because i have to say, while this cookie cake is delicious cold, it was fabulous warm. like a cozy hug!
the base is a combination of gluten-free all purpose flour and almond flour, and i can’t recommend any subs because this is the only way i formulated it :).
other ingredients include coconut yogurt (kite hill brand), coconut sugar, flax eggs and more.
there’s a solid chance you have everything that you need to make this if you bake a lot and have some bananas that are overripe!

Vegan and Gluten-Free Banana Cookie Cake

- Cookie Cake
3 medium mashed overripe bananas
1/3 cup coconut yogurt
2 flax eggs (2 tbsp flax meal + 6 tbsp water and let it set for 5 min)
1/2 tbsp vanilla extract
1 tbsp baking powder
1/4 cup coconut sugar
1/2 tsp cinnamon
1 cup gluten-free all purpose flour
1 cup almond flour
1/2 cup chocolate chips
- frosting
3/4 cup room temp vegan cream cheese
1/2 cup chocolate chips melted with 2 tbsp vegan butter or coconut oil
1/4 cup powdered sugar
Directions
- preheat the oven to 350 degrees.
- mix the cookie cake ingredients and fold in the chocolate chips. add to a very well greased or parchment lined 8 x 8 baking tray.
- bake at 350 for 37 minutes and let it cool down completely.
- whisk the frosting ingredients together and place in the fridge to set 10 min or so. frost the cake and enjoy!
- store in the fridge in an airtight container.
