here’s the only vegan grilled cheese ya ever need in your life! well, truly you don’t ever need a dairy version again because this is better, i promise. ditch the dairy and make this deliciousness with creamy cashews, spinach, buffalo sauce and more.
i don’t like grilled cheese….said no one ever. EVER.
even if you are a little hesitant to try a homemade cheese filling, i promise it doesn’t get easier than this recipe.
with a few easy steps, you will have Homemade Vegan Buffalo Spinach Grilled Cheese made in no time.

get yourself some goooood bread first and foremost. that’s half of the out of this world grilled cheese equation.
personally, i prefer sourdough, it’s just fantastic and easy on my stomach. Trader Joe’s actually has one of my favorites.
the ingredients are excellent, the flavor is on point AND, the bread is indeed vegan.

once you have your fabulous bread chosen, make sure you buy some raw cashews and soak them for 4-6 hours. yes, that’s a long time but the creamy texture is worth it.
you can speed up the process by soaking the cashews in boiling hot water, then they could be done around hour 2.
after they’re done soaking, you rinse and drain the cashews and add them to a blender with the rest of the goods.
one of the most important ingredients is buffalo sauce and i highly recommend you use a good one like Primal Kitchen’s.

then, you can add some unsweetened plain dairy free milk to thin the sauce out a bit along with nutritional yeast, garlic powder and sea salt.
in terms of spinach, i highly recommend that you use frozen organic spinach that’s been completely thawed.
i used 1 and 1/2 cups and this made three large sandwiches.
if you want to steam fresh spinach and wilt some down go for it, i just wanted to save time and make the process even easier.

here’s everything you need to make Homemade Vegan Buffalo Spinach Grilled Cheese
- bread of your choosing- i used 6 large sourdough slices
- organic frozen then thawed spinach
- raw cashews
- unsweetened plain dairy free milk
- nutritional yeast
- garlic powder
- buffalo sauce
- sea salt and pepper to taste

Homemade Vegan Buffalo Spinach Grilled Cheese

Ingredients
- 6-8 slices sourdough bread
- cheese
1 and 1/4 cups raw cashews soaked for several hours in water and rinsed/drained
1/4 cup buffalo sauce
1/4 cup unsweetened dairy free milk (or more if need be)
1 tbsp nutritional yeast
1/2 tbsp garlic powder
sea salt and pepper to taste
- 1 and 1/2 cups frozen then completely thawed spinach
Directions
- blend the cheese ingredients in a high powered blender until a thick consistency forms.
- add in the spinach and warm through on the stovetop or in the microwave if you would like.
- then, add a generous amount to a slice of bread and place on a pan coated with avocado oil.
- cook on each side for a couple of minutes until golden brown on each side.
- store in the fridge in an airtight container and enjoy!
