happy Saturday friends! it’s a long weekend too, so how exciting! not sure what everyone has planned in the food department this weekend, but i’m guessing lots of cookout dishes! if you want to take a break from those and make an easy + delicious dinner, look no further than my Healthy Vegan Cauliflower Alfredo.
it’s packed with fiber, flavor and nutrients, yet the Alfredo Sauce tastes oh so indulgent.
cauliflower truly is the best multipurpose veggie, there are so many things you can make with it!

so this is a pretty thick sauce and you can of course thin yours out more than mine by adding more liquid.
you also don’t have to use the same pasta as i did of course! i used chickpea pasta, which tends to fall apart a little more easily than say brown rice pasta or just semolina.
my hubs loves it for the protein though and it does taste really good! ok, let’s talk about the sauce more!
the cauliflower is roasted in the oven for 30 minutes instead of boiled! i just think the flavor is so much better.

also, i roast the cauliflower plain, so i don’t add any oil or seasonings. this sauce is oil free and all of the seasonings are added to the blender when we mix the sauce.
there is a secret ingredient that i think takes the sauce up a notch and that’s vegan parmesan cheese. the only two brands i have tried are violife and good planet. both are great!
i know that follow your heart makes vegan parmesan cheese too, so you could always try that. if you can’t get ahold of any or just aren’t a fan, go with vegan mozzarella.

here’s everything you need to make Healthy Vegan Cauliflower Alfredo:
- head of cauliflower or about 4 cups florets
- pasta of your choosing
- unsweetened plain almond milk
- vegetable broth
- vegan parmesan cheese
- garlic
- onion powder
- nutritional yeast
- liquid aminos
- sea salt and pepper to taste
super simple and like i said, you can replace the vegan parmesan with any kind of cheese but the next best option would probably be mozzarella.

Healthy Vegan Cauliflower Alfredo

Ingredients
- 1 and 1/2 boxes pasta of your choosing
- Alfredo Sauce
1 head cauliflower cut into florets
1/2 cup unsweetened plain almond milk
1/2 cup vegetable broth (can add more to make sauce thinner than mine)
1 tbsp liquid aminos
1/3 cup shredded vegan parmesan cheese
1/4 cup nutritional yeast
1 tsp minced garlic
1 tsp onion powder
sea salt and pepper to taste
Directions
- preheat the oven to 400 degrees.
- roast the cauliflower florets for 30 minutes.
- then, add to a blender or food processor with the other sauce ingredients. blend until a thick and smooth sauce forms.
- pour over the cooked pasta and mix well! store in the fridge in an airtight container and enjoy!
