Homemade Vegan Buffalo Spinach Grilled Cheese

Ingredients
6-8 slices sourdough bread
cheese
1 and 1/4 cups raw cashews soaked for several hours in water and rinsed/drained
1/4 cup buffalo sauce
1/4 cup unsweetened dairy free milk (or more if need be)
1 tbsp nutritional yeast
1/2 tbsp garlic powder
sea salt and pepper to taste
1 and 1/2 cups frozen then completely thawed spinach
Instructions
blend the cheese ingredients in a high powered blender until a thick consistency forms.
add in the spinach and warm through on the stovetop or in the microwave if you would like.
then, add a generous amount to a slice of bread and place on a pan coated with avocado oil.
cook on each side for a couple of minutes until golden brown on each side.
store in the fridge in an airtight container and enjoy!
