sweet summertime means all of the outdoor fun and best of foods. fresh comes to mind and that’s exactly what Creamy Vegan Summer Pasta Salad tastes like. with flavors like basil, heirloom tomatoes, vegan mozzarella and red onion, it’s summer in a salad!
you can have this made in no time really, which is what i love most about the recipe.
pick your pasta and cook that according to the package directions. in the meantime, you can cut the veggies and prepare the dressing.
obviously, the contents of the recipe are delicious but you know what i say, a sauce makes it,
semi homemade recipes are my favorite because you can incorporate your own fresh twists but some of the foods are already prepared.
pasta is legit the easiest dinner and it’s always my go to because i know that i can pack it with nutrients. here, i used brown rice pasta because it holds together so well.
while Creamy Vegan Summer Pasta Salad makes an excellent dinner, it makes an equally delicious side dish.
you can bring this to any get together and people would be thrilled. also, you can get creative and choose your own add ins.
if you don’t like something that i used, swap it! the star is really the dressing but i think everything in this dish goes together so well.
confession, i LOVE vegan mayo if it’s a good one like primal kitchen brand for example. seriously, idk how they do it!
however, if you just don’t like vegan mayo or mayo in general, you can swap it in this recipe for creamy coconut yogurt.
truly, i don’t think it will be quite as tasty but it will still certainly taste yummy.
being vegan and having vegan cheeses in abundance is such a joy. seriously, i LOVE vegan cheese!
in fact, i can’t recall any that i just can’t stand. miyoko’s makes such a good vegan mozzarella and that’s what i used in my recipe.
i was able to mold it into mozzarella balls, but that’s not necessary.

- one box of pasta of your choosing
- heirloom tomatoes but any works
- red onion
- pumpkin seeds
- vegan mozzarella but any vegan cheese works
- vegan mayo
- onion salt or onion powder
- vegetable broth
- sea salt and pepper to taste

Creamy Vegan Summer Pasta SaladCourse: Lunch & Dinner, Pasta
4-6 depending on portion size
- 1 box pasta of your choosing
1/2 cup pumpkin seeds
1 block vegan mozzarella
1 and 1/2 cup heirloom tomatoes cut into small pieces
1/3 cup chopped red onions
handful sliced fresh basil
1/3 cup vegan mayo
1/4 cup vegetable broth
large handful fresh basil
1/2 tbsp minced garlic
1/2 tbsp onion salt
sea salt and pepper to taste
- cook the pasta according to package directions.
- blend the dressing ingredients in a blender until a smooth consistency forms.
- pour over the pasta, veggies, basil, mozzarella and pumpkin seeds and mix well.
- store in the fridge in an airtight container and enjoy.
