Eat Your Skincare Salad with Creamy Peanut Dressing

Ingredients
  

  • Salad
  • 2 large carrots peeled into ribbons
  • 1 large cucumber peeled into ribbons
  • 1 red bell pepper thinly sliced
  • 1 cup thinly sliced red cabbage
  • 1 cup thinly sliced green cabbage
  • 1/3 cup chopped fresh cilantro
  • 3 green onions thinly sliced
  • 2 –3 tablespoons roasted peanuts
  • Creamy Peanut Glow Dressing
  • 1/4 cup runny peanut butter
  • 1 teaspoon sesame oil optional
  • 2 tablespoons rice vinegar or fresh lime juice
  • 1 tablespoon coconut aminos or soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon freshly grated ginger or ginger juice
  • 1 teaspoon minced garlic
  • 3 –6 tablespoons warm water to thin
  • Optional: pinch of red pepper flakes or turmeric

Method
 

  1. Prepare the vegetables
  2. Use a vegetable peeler to shave the carrots and cucumber into long ribbons. Thinly slice the bell pepper, red cabbage, and green cabbage.
  3. Assemble the salad
  4. Add all vegetables, cilantro, and green onions to a large mixing bowl.
  5. Make the dressing
  6. In a small bowl, whisk together the peanut butter, rice vinegar or lime juice, coconut aminos, honey, ginger, and garlic.
  7. Slowly add warm water, one tablespoon at a time, until the dressing is smooth and pourable. Stir in the sesame oil, if using.
  8. Toss the salad
  9. Pour the dressing over the salad and toss well until everything is evenly coated.
  10. Finish and serve
  11. Top with roasted peanuts just before serving for added crunch.
