it’s cozy season all over right now and that means oh so cozy dishes that you just want to curl up with in your favorite pjs. for me, that dish is Vegan Lemon Curry Orzo, one of my all time favorites. i actually first made this in 2019 and not sure why i didn’t get around to posting it because the recipe is divine.
are you an orzo fan? i love this little pasta gem in just about every dish.
it goes so well in my Vegan Lemon Curry Orzo but you can replace it with a faster cooking rice or even quinoa.

there’s something so special about lemon savory dishes, idk what it is. the flavors in this recipe are incredible.
you have the creamy component from vegan cream cheese and almond milk.
then you have the tart and tangy factor from the lemon and a delicious salty element from miso paste.
everything goes well and i know you’re going to make this on repeat.

as far as veggies, i went with a variety of mushrooms that i found at my local Whole Foods. you don’t have to use a variety though.
8 ounces of any would work! cremini would have been the other type if i hadn’t used a variety pack.
also, there’s spinach in this dish but you can use any green! i think spinach is the best for the flavors but kale would be a great alternative.

as for the curry powder, it’s totally necessary and what elevates this dish. the curry pairs so well with lemon.
the cooking time isn’t that long either, this dish is done in under 45 minutes, so that’s my kind of meal.
while i think of this as either a main course or side dish, if it is your main, i do recommend adding a protein of sorts.
roasted tofu or tempeh would be fabulous! you could even roast some chickpeas and add them to the top, that would be a beautiful addition!
this keeps really well in the fridge for a couple of days but i love when it’s nice and fresh!

Vegan Lemon Curry Orzo

Ingredients
8 ounces mixed mushrooms
3 handfuls spinach
1 mediumย chopped onion
1 tbsp minced garlic
3 tbspย extra virgin olive oil
2 cups dairy free plain milk
1 and 1/2 cups veggie broth
1 tbsp curry powder
1/3 cup fresh lemon juice
1/4 cup vegan cream cheese
1 tbsp miso paste
1 cup orzo
Directions
- saute the onions, mushrooms and garlic in olive oil for 8 minutes on medium heat.
- then, add all remaining ingredients and stir well. once the mixture comes to a boil, then cook another 25 minutes and stir often.
- the mixture should be thick and the orzo fully cooked. serve warm and store in an airtight container.
