Ingredients
8 ounces mixed mushrooms
3 handfuls spinach
1 medium chopped onion
1 tbsp minced garlic
3 tbsp extra virgin olive oil
2 cups dairy free plain milk
1 and 1/2 cups veggie broth
1 tbsp curry powder
1/3 cup fresh lemon juice
1/4 cup vegan cream cheese
1 tbsp miso paste
1 cup orzo
Instructions
saute the onions, mushrooms and garlic in olive oil for 8 minutes on medium heat.
then, add all remaining ingredients and stir well. once the mixture comes to a boil, then cook another 25 minutes and stir often.
the mixture should be thick and the orzo fully cooked. serve warm and store in an airtight container.
