whatever you’re making for dinner this weekend, cancel the plans and whip up The Best One Pot Creamy Sauce with Cauliflower. let’s just say it’s good enough to drink. between the sunflower seed butter, liquid aminos, rice vinegar, ginger and more, it’s a total culinary dream.
ya know those sauces you just want to pour into a glass and drink? ok, maybe that’s gross and i’m the only one that wants to do that lol, but seriously, THIS SAWCE.
it’s fire y’all and legit life changing. this creamy sauce is certainly not limited to be eaten with just cauliflower, but it happens to be one of my favorite veggies.

in fact, you could add a variety of veggies like zucchinis, bell peppers, sweet potato, Brussels sprouts, i mean you name it.
i did bake the cauliflower ahead of time, just for 12 minutes at 400 degrees. this speeds the cooking process and also helps the cauliflower stay together more.
the florets will cook down, but they should still stay together pretty well!

in terms of the sunflower seed butter, i either recommend using sun butter or Trader Joe’s brand, which is basically the same thing. maybe it is lol?
the texture is SUPER creamy, and the taste is exceptional, in my opinion. a great alternative though would be peanut butter.
peanut butter would be equally delicious and if not, even BETTER. huge peanut butter junkie over here, i mean i love it with just about everything.

the salty component comes mainly from the liquid aminos, and i love the brand Braggs. you could also use coconut aminos or soy sauce.
there is a slightly sweet component and i definitely think it’s necessary to balance out the rice vinegar, which it going to be quite sour or tart.
for the sweet component, i used coconut nectar, a total of 3 tbsp. you could also use maple syrup, i think that would work just fine.

the basil is of course optional for topping but i think the flavor combination with the sauce is out of this world.
plus, every dish needs some sort of fresh component and basil is it! you could also try cilantro, that would be an excellent option too.
as you can see, i served mine with rice, but it’s plenty good on it’s own. however, to serve the dish as a meal, substance is needed. pasta would be delicious too!

The Best One Pot Creamy Sauce with Cauliflower

- 1 and 1/2 large heads cauliflower cut into florets
- sauce
1/4 cup liquid aminos
1/4 cup rice vinegar
3 tbsp coconut nectar
1/4 cup avocado oil
1 cup vegetable broth
1/4 cup very creamy sunflower seed butter
1/2 tsp dijon mustard
1 tsp grated ginger
1 tsp onion powder
1/2 tbsp minced garlic
Directions
- preheat the oven to 400 degrees. bake the cauliflower florets for 12 minutes.
- whisk the sauce ingredients together in a large pot and bring to a boil. once the sauce comes to a boil, add the cauliflower after it’s baked and place a lid on the pot. cook for 15 minutes on medium heat. stir periodically.
- then, remove the lid and cook another 15 minutes and stir periodically. the sauce should be pretty thick when it’s done.
- serve with your favorites and enjoy!
