i have a love of smashed potatoes and broccoli cheddar soup, so it’s only right that i would have combined the two.
this is SUCH an easy recipe to make and you can serve it to anyone and they will love it.
vegan or not, Vegan Broccoli Cheddar Smashed Potatoes is a crowd pleaser. make it for your next dinner side dish or as an appetizer for a get together.
while i used small/medium sized russet potatoes, you can use any kind that you want!
smaller ones would be perfect as an appetizer for a party or something. yukon gold potatoes would be my go-to for that.
to make Vegan Broccoli Cheddar Smashed Potatoes, you will have to boil the potatoes first until they’re tender and easily pierced with a fork.
then, you can take a glass, carefully smash them, spray with cooking oil and bake at 400 degrees.
then, there’s the fabulous broccoli cheddar topping. it’s healthy, made with minimal ingredients and totally delicious.
i add some to the baked smashed potatoes and garnish with more cheddar cheese before i broil them.

potatoes (used small/medium russet)
cooking oil spray
dairy free milk
vegan cheddar cheese
sea salt and pepper
you can use any brand of vegan cheddar cheese, anything will work. if you don’t want to use cheddar, then opt for another kind!

Vegan Broccoli Cheddar Smashed PotatoesCourse: Lunch u0026amp; Dinner, Side Dishes
9 small/medium russet potatoes
- roccoli cheddar cheese
10 ounces steamed broccoli
3/4 cup plain and unsweetened dairy free milk
1/4 cup nutritional yeast
1 tbsp dijon mustard
1 tsp garlic powder
1 tsp onion powder
1/2 cup vegan cheddar cheese
sea salt and pepper to taste
cooking oil spray
- preheat the oven to 400 degrees.
- boil the potatoes for 20-30 minutes until they are tender and easily pierced with a fork.
- place on a parchment lined baking tray and use the bottom of a glass or mug to flatten the potatoes. spray with cooking oil spray.
- bake at 400 degrees for 32 minutes. pulse the broccoli cheddar ingredients in a food processor until a thick mixture forms.
- spoon the mixture on top of the potatoes, add more vegan cheddar and broil for a few minutes.
