Ingredients
9 small/medium russet potatoes
roccoli cheddar cheese
10 ounces steamed broccoli
3/4 cup plain and unsweetened dairy free milk
1/4 cup nutritional yeast
1 tbsp dijon mustard
1 tsp garlic powder
1 tsp onion powder
1/2 cup vegan cheddar cheese
sea salt and pepper to taste
cooking oil spray
Instructions
preheat the oven to 400 degrees.
boil the potatoes for 20-30 minutes until they are tender and easily pierced with a fork.
place on a parchment lined baking tray and use the bottom of a glass or mug to flatten the potatoes. spray with cooking oil spray.
bake at 400 degrees for 32 minutes. pulse the broccoli cheddar ingredients in a food processor until a thick mixture forms.
spoon the mixture on top of the potatoes, add more vegan cheddar and broil for a few minutes.
