ok, the veggies, avocado, beans and pasta are all flippin’ fabulous BUT the SAWCEEEE! let’s taco bout it. lol sorry, had to with the food pun, it is my brand after all!
sooooo, this sauce, um it’s positively amazing because it has been perfected, let me tell ya. small adjustments make such a huge difference.

here’s everything that you need to make The Best Vegan Taco Pasta Salad!
- 1 lb pasta of your choosing! i used brown rice pasta from jovial
- roasted corn
- cherry tomatoes
- black beans
- avocados
- vegan mayo
- buffalo sauce
- chili powder
- garlic powder
- onion powder
- sea salt and pepper to taste
seems incredibly easy and minimal, right?! YES, that’s because it is. i’m here to make eating vegan as easy, nourishing and delicious as possible. this is one recipe you don’t want to miss out on :).

as far as vegan mayo, you can use any brand that you want! for the mayo, i used primal kitchen vegan mayo AND i also used their buffalo sauce because it’s the best thing ever.

The Best Vegan Taco Pasta Salad

Ingredients
1 lb pasta of your choosing
1 and 1/2 cups roasted corn (used Trader Joe’s frozen)
2 medium-large avocados cut into pieces
1 can (15 ounces) rinsed and drained black beans
1 cup cherry tomatoes cut in half
- sauce
3/4 cup vegan mayo
1/4 cup buffalo sauce
1 tsp chili powder
1 tsp onion powder
1 tsp garlic powder
sea salt and pepper to taste
Directions
- cook the pasta according to package directions. drain the pasta and let it cool for a few minutes. then add the veggies, avocado and beans.
- whisk the sauce ingredients together in a bowl and then pour on top of the pasta salad mixture. combine well until everything is evenly coated.
- serve at room temperature and enjoy! you can store in the fridge in an airtight container.
