Cheesy Vegan Potato and Black Bean Casserole

tomorrow is monday, so the Sunday scaries are settling in a little bit, but not when it comes to the menu this coming week! Cheesy Vegan Potato and Black Bean Casserole is made in under 45 and probably one of the tastiest casseroles i’ve ever had.

made with vegan cream cheese, nutritional yeast, dairy free milk and more, you can bet that Cheesy Vegan Potato and Black Bean Casserole is both nourishing and tasty.

using minimal ingredients is the best, especially when there’s a merriment of incredible flavors produced from so few foods.

the cooking process is really easy and there’s no added oil for all of my friends who prefer that! you’re actually going to steam the potatoes and onions first.

then, all of the other ingredients can be added and mixed together before you transfer the mixture to a casserole dish.

the casserole bakes in the oven for 27 minutes and the vegan cheese is so delicious and bubbly at the end. as far as vegan cheese, i used cream cheese in the filling and shredded on the top.

for the filling, i used miyoko’s vegan cream cheese and i also love Monty’s and Tofutti. i think both bake well and have great flavor.

as far as the shredded cheese on top, that’s Violife but anything is going to work! go ahead and use your favorite. while i used vegan mozzarella, cheddar would be amazing too.

here’s everything you need for Cheesy Vegan Potato and Black Bean Casserole

  • golden potatoes

  • onion

  • black beans

  • vegetable broth

  • vegan cream cheese

  • dairy free milk

  • nutritional yeast

  • onion salt (or onion powder and sea salt)

  • minced garlic

  • dijon mustard

  • paprika

  • vegan shredded cheese for topping

Cheesy Vegan Potato and Black Bean Casserole

Cooking time




  • 4 cups cubed golden potatoes (cut into small cubes so they cook through)

  • 1/2 cup chopped onions

  • 1 and 1/4 cup vegetable broth

  • 1 can (15 ounces black beans) rinsed and drained

  • 1/2 cup vegan cream cheese

  • 1/2 cup dairy free milk

  • 1/4 cup nutritional yeast

  • 1/2 tbsp onion salt

  • 1/2 tbsp dijon mustard

  • 1 tsp paprika

  • vegan shredded cheese for topping


  • preheat the oven to 375 degrees.
  • in a large pot, add the cubed potatoes, onions and vegetable broth. cook on medium high heat for 5 minutes with a lid on once it comes to a boil.
  • after 5 minutes, remove the lid and cook another 5 minutes. stir periodically.
  • then, turn off the heat and add the black beans and remaining ingredients except the shredded vegan cheese.
  • stir well and then add to an 8 x 11 baking pan. top with vegan shredded cheese and bake at 375 for 27 minutes.
  • store in the fridge in an airtight container and enjoy!

  1. This was fantastic! Thank you. I substituted half the potatoes with butternut squash (I half-roasted them first) and added a 14.5-oz can of corn. We love the flavor produced when combining black beans, butternut squash, and corn. The flavors in this entire combination were fantastic. Excellent work on this recipe.
