Feel Good Lemon, Chickpea and Sweet Potato Turmeric Soup

Ingredients

  • 1 cup very finely diced white onion
    3-4 cups cubed sweet potatoes
    1 can rinsed and drained chickpeas
    1/4 cup olive oil
    1/4 cup nutritional yeast
    1/2 tbsp garlic powder
    1/2 tsp turmeric
    1/3 cup lemon juice
    1 tbsp ginger juice
    1 cup thick and creamy coconut yogurt
    7 cups vegetable broth

  • fresh herbs like parsley for garnishing

Directions

  • heat olive oil in a large pot over medium heat. add diced onion, cubed sweet potatoes, and rinsed chickpeas. sauté for about 8-10 minutes until onions are translucent and sweet potatoes start to soften.

  • add nutritional yeast, garlic powder, and turmeric to the pot. sauté for another minute to allow the spices to become fragrant.

  • pour in lemon juice and ginger juice, followed by the coconut yogurt and vegetable broth. stir well to combine all the ingredients.

  • bring the soup to a gentle simmer. reduce the heat to medium-low and let it cook for about 45-50 minutes, or until the sweet potatoes are completely tender.

  • once cooked, taste and adjust seasoning if needed. serve hot and enjoy your feel good lemon, chickpea, and sweet potato turmeric soup!
