today, we’re getting into the yummy world of plant-based sandwiches with a twist on a classic favorite: the Vegan Chickpea Waldorf Salad Sandwich!

i grew up eating waldorf salad with chicken and dairy but let me tell you, this vegan one’s a game-changer!

the mighty chickpea: our protein-packed hero is the perfect protein for our sandwich!

first off, let’s give a round of applause to our star ingredient: chickpeas!

these little powerhouses are a fantastic source of plant-based protein, making them a stellar addition to your plant based/vegan diet.

packed with fiber, vitamins, and minerals, chickpeas keep you feeling full and satisfied.

but this sandwich isn’t just about protein; it’s a nutrient-packed wonder.

think, a medley of chickpeas, crunchy celery, sweet apple, tangy dried cherries, fresh parsley, and creamy vegan mayo and cream cheese, all in one epic bite.

of course, the taste is absolutely phenomenal, but wow, the textures are just incredible.

i mean, we’ve got a little bit of everything going on here, and that’s what makes it so irresistible.

Vegan Chickpea Waldorf Salad Sandwich

yields enough for 4 thick sandwiches or 5-6 servings as a side salad

Ingredients

  • 1 can rinsed and drained chickpeas slightly mashed

  • 1 cup chopped apple

  • 1 cup finely chopped celery

  • 1/2 cup dried cherries

  • 1/2 cup chopped walnuts

  • 1/4 cup chopped parsley

  • 1/3 cup vegan mayonnaise

  • 1/4 cup vegan cream cheese

  • 1 tbsp dijon or stone ground mustard

  • 1/2 tbsp everything but the bagel seasoning

  • 1/2 tsp garlic powder

  • bread of choice- used ezekiel

Directions

  • all you have to do is chop the veggies and fruit and add everything to a large mixing bowl!
  • combine all ingredients until everything is coated with the cream cheese, mayo and seasoning.
  • scoop onto your favorite bread to make sandwiches or enjoy as is!
  • store in the fridge in an airtight container.
