Ingredients
1 cup very finely diced white onion 3-4 cups cubed sweet potatoes 1 can rinsed and drained chickpeas 1/4 cup olive oil 1/4 cup nutritional yeast 1/2 tbsp garlic powder 1/2 tsp turmeric 1/3 cup lemon juice 1 tbsp ginger juice 1 cup thick and creamy coconut yogurt 7 cups vegetable broth
pour in lemon juice and ginger juice, followed by the coconut yogurt and vegetable broth. stir well to combine all the ingredients.
bring the soup to a gentle simmer. reduce the heat to medium-low and let it cook for about 45-50 minutes, or until the sweet potatoes are completely tender.
