thursday eve, you are so appreciated & to celebrate, 8 Ingredient Sun-dried Tomato Pasta is on the menu. Alex and i had this for dinner last night and we are so excited to have leftovers tonight! sun-dried tomatoes are amazing and make the perfect base for a sauce.
8 ingredients total, including the pasta. yep, that’s it! talk about lunch or dinner made easy. the sauce may be minimal but dang, it’s packed with flavor.
the sun-dried tomatoes i use are jarred from the store and they are stored in olive oil. aside from that though, i don’t add any additional oil.

as far as pasta goes, i don’t think i’ve ever eaten any that i don’t like lol. anything will work here and i opted for brown rice pasta because it holds up so well.
also, this is a completely gluten-free recipe as long as the pasta you use is gluten free too!
to make the pasta sauce, you’re going to need a food processor. the ingredients are blended into a tomato paste-like perfect sauce that’s mixed in with warm pasta for the most delicious dish.

you can even make some homemade cashew parm to go with it! all i do is blend cashews with a small clove of fresh garlic, couple tbsp of nutritional yeast and some sea salt.
it honestly tastes like parmesan cheese and I can’t believe it’s plant based! i totally would have made some if i had cashews on hand. oh well, next time.

so what all is in the sauce?
- sun dried tomatoes
- tomato paste
- vegetable broth
- nutritional yeast
- minced garlic
- onion powder
- sea salt

there’s a good chance you already have most of these ingredients if not all in your kitchen!
if you don’t though, sun dried tomatoes are sold at basically every single grocery store and nowadays, i can even find nutritional yeast most places, which is amazing.
oh aside from minimal ingredients, wholesome foods and incredible taste, this dinner is made within about 10 minutes.
you simply have to cook the pasta according to package directions and while that’s doing it’s thing, throw everything into the food processor for the sauce.

- 1 box cooked pasta of your choosing
- Pasta Sauce
1/2 cup sun-dried tomatoes
2 tbsp tomato paste
1/2 cup vegetable broth
2 tbsp nutritional yeast
1 tsp minced garlic
1 tsp onion powder
1/2 sea salt or to taste
Directions
- cook the pasta according to package directions.
- add the sauce ingredients to a food processor and blend until a smooth consistency.
- pour over the pasta, mix well and enjoy! you can store in the fridge in an airtight container.
