i incorporated strawberries and pomegranate arils to give the salad summer freshness that’s perfect for hot days spent in the sun.

Ingredients

  • salad
  • 1 bunch lacinato kale thinly sliced and lightly massaged in avocado oil 

  • 2 cups shredded brussels sprouts lightly massaged in avocado oil 

  • 2 medium avocados cut into cubes

  • 8 ounces crumbled vegan feta

  • 1/2 cup pomegranate arils

  • 3/4 cup chopped walnuts

  • 2 cups strawberries

  • 1 can rinsed and drained chickpeas

  • 1/3 cup chopped red onion

  • sea salt to taste

  • dressing
  • 1/3 cup vegan mayo (chosen foods) or thick coconut yogurt

  • 1 tbsp toasted sesame oil

  • 1 tbsp miso paste

  • 1/4 cup vegetable broth

  • 1 grated garlic clove

  • 1 tbsp rice vinegar

  • 1 tbsp balsamic glaze

Directions

  • add all salad ingredients to a large mixing bowl.
  • whisk the dressing ingredients until well-combined and pour over the salad ingredients.
  • mix well and enjoy at room temp or chilled! store in the fridge in an airtight container.
