What Makes This Potato Crust Quiche Different?

Traditional quiche recipes typically use a buttery pastry crust. While delicious, making homemade pastry can be time-consuming.

This recipe takes a completely different approach.

Instead of rolling out dough, we’re using boiled Yukon gold potatoes and smashing them into the bottom and sides of a pie dish. A drizzle of olive oil and a generous sprinkle of seasoning help the potatoes develop beautifully golden, crispy edges in the oven.

Once the crust is baked, it’s filled with a mixture of eggs, Greek yogurt, cheddar cheese, sweet peas, and fresh herbs.

The result is a combination of textures: golden potatoes on the outside and a soft, creamy, savory egg filling on the inside.

It’s almost like combining crispy breakfast potatoes and a cheesy vegetable quiche into one delicious dish.

Ingredients You’ll Need

Yukon Gold Potatoes

Yukon gold potatoes are my favorite choice because of their naturally buttery flavor and creamy texture. They smash beautifully and develop golden edges when baked with olive oil.

I recommend using 1½ pounds to create a substantial crust in a standard 9-inch pie dish.

Eggs

Four large eggs create the foundation of the filling. They provide protein and structure while helping everything bake together.

Greek Yogurt

One of my favorite ingredients for healthier savory baking! Greek yogurt adds protein, creaminess, and a subtle tang without needing heavy cream.

I recommend plain 2% or 5% Greek yogurt for the best texture, although nonfat can also work.

Sharp Cheddar Cheese

We’re using shredded cheddar instead of mozzarella for a richer, more savory flavor.

I especially love sharp cheddar because a relatively small amount delivers plenty of cheesy flavor. It pairs beautifully with the potatoes, fresh herbs, and sweet peas.

Green Peas

Peas add a subtle sweetness, beautiful pops of green, fiber, and additional plant-based protein.

Be sure to thaw and drain frozen peas before adding them to the egg mixture to avoid introducing excess moisture.

Fresh Chives, Dill & Basil

The fresh herbs are what make this recipe extra special!

Chives bring a delicate onion flavor, dill adds freshness, and basil provides a slightly sweet, aromatic finish.

I recommend using fresh herbs whenever possible for the most vibrant flavor.

Cornstarch

Just one tablespoon of cornstarch helps absorb some of the excess moisture and gives the filling a little more structure.

This is especially helpful because we’re using Greek yogurt, milk, and vegetables. It helps the quiche set more firmly and slice cleanly once cooled.

Seasonings & Lemon Zest

Garlic powder, onion powder, sea salt, black pepper, and a touch of lemon zest bring everything together.

The lemon zest is subtle but brightens the herbs and balances the richness of the cheddar.

The Secret to the Perfect Crispy Smashed Potato Crust

The most important step in this recipe is baking the potato crust before adding the egg filling. Because the potatoes are already boiled, you might be tempted to skip this step. Don’t!

Prebaking allows moisture to evaporate and helps the potatoes develop golden, crispy edges. For the best results, make sure to press the potatoes firmly into the pie dish, creating an even layer across the bottom and extending up the sides.

You don’t want large gaps where the egg mixture could seep through.

Drizzle the potatoes with olive oil, season generously, and bake at 425°F for approximately 30–35 minutes.

The edges should look golden and lightly crisp before adding the filling.

Keep in mind that the bottom of the potato crust will soften slightly once the egg mixture is added, but the prebaked edges should retain some of their delicious texture.

How to Know When Your Quiche Is Fully Baked

One of the biggest mistakes when baking quiche is assuming it needs to be completely firm the moment it comes out of the oven.

A slight jiggle in the center is perfectly normal!

When the quiche is finished baking, the edges should look set and the center may still have a gentle, custard-like wobble. However, the middle should never appear liquid or resemble raw eggs. For the most reliable results, check that the center reaches 160°F using a food thermometer.

The Longer It Cools, the Better It Sets!

This is one of my biggest tips for this recipe. Although you can enjoy the quiche warm, allowing it to cool longer makes a noticeable difference in how well it holds together.

The eggs, Greek yogurt, cheddar, and cornstarch continue to firm as the quiche cools.

I recommend waiting at least 15–20 minutes before slicing, but if you’re preparing this recipe specifically for meal prep, allowing it to cool further will give you even cleaner, sturdier slices.

In fact, after refrigerating, the quiche becomes noticeably firmer and easier to portion. If you want those beautiful, defined slices for serving or photographing, patience is key!

Is This Smashed Potato Quiche Good for Meal Prep?

Absolutely! This is one of my favorite things about the recipe.

Instead of making breakfast from scratch every morning, you can prepare one quiche and divide it into four generous servings.

Each portion includes protein from the eggs, Greek yogurt, cheddar, and peas, along with satisfying carbohydrates from the potatoes.

It’s an especially convenient option for busy mornings because it reheats beautifully. You can enjoy it warm for breakfast, pair it with a simple side salad for lunch, or serve it alongside fresh fruit.

Storage & Reheating Tips

Refrigerator: Store the cooked quiche in an airtight container in the refrigerator for up to 4 days.

Freezer: Once completely cooled, wrap individual slices tightly and freeze for up to 2 months for best quality. Thaw overnight in the refrigerator before reheating.

Oven: Reheat individual slices at 350°F until heated through. This is one of the best methods for helping the potato crust regain some crispiness.

Air fryer: Reheat at 325–350°F for approximately 5–8 minutes, depending on slice thickness.

Microwave: Microwave in short intervals until hot throughout. This is the quickest option, although the potato crust will be softer.

For food safety, refrigerate within 2 hours of cooking and reheat leftovers to 165°F.

Easy Ingredient Substitutions & Variations

Switch up the cheese: While sharp cheddar is delicious, you can substitute Gruyère, Swiss, Monterey Jack, or mozzarella.

Add spinach: Fold in a small handful of finely chopped spinach. If using cooked spinach, squeeze out excess moisture first.

Make it dairy-free: Use a thick, unsweetened dairy-free yogurt, dairy-free milk, and your favorite dairy-free shredded cheese. The protein content and texture will vary.

Change the herbs: Fresh parsley, thyme, or tarragon would be delicious additions.

Use different potatoes: Baby red potatoes can also work, although Yukon gold potatoes are my preference for their creamy centers and golden edges.

Add a little heat: A pinch of red pepper flakes or smoked paprika would add a delicious savory kick.

Frequently Asked Questions

Can I use leftover boiled potatoes?

Yes! This is a fantastic way to use leftover boiled potatoes. Just make sure they’re tender enough to smash easily and haven’t been sitting in the refrigerator for more than a few days.

Do I need to peel the potatoes?

No! I recommend leaving the skins on. They add texture and help create those delicious crispy edges.

Why is my quiche still soft in the middle?

Quiche naturally has a soft, custard-like texture when warm. If the center has reached 160°F, allow it to cool for at least 15–20 minutes before slicing. If the middle is still liquid or under temperature, return it to the oven.

Does cornstarch make the quiche firmer?

Yes. Cornstarch helps thicken the filling and absorb some moisture, which can improve how well the slices hold together. One tablespoon is enough without making the filling overly dense.

Can I make this the night before?

Definitely! In fact, it’s an excellent make-ahead recipe because the filling becomes firmer after refrigeration. Simply reheat individual slices when you’re ready to eat.

Can I use frozen peas?

Yes! Just thaw and drain them thoroughly before adding them to the filling.
