Ingredients

  • 2 boxes cooked chickpea pasta
  • sauce
  • 1 small hannah sweet potato sliced

  • 3 cups cauliflower florets

  • 1/3 cup vegan caesar dressing

  • 1 cup plain unsweetened dairy free milk

  • 2 cloves garlic

  • 1 tsp onion powder

  • 1/8 cup nutritional yeast

  • 12 oz vegan sour cream or cream cheese

  • sea salt and pepper to taste

Directions

  • preheat the oven to 375 degrees. boil the cauliflower and sweet potato for about 12-15 minutes or until the slices are easily pierced with a fork.
  • then, add all of the sauce ingredients to a blender and blend until a smooth sauce forms. mix with the cooked pasta and place in a deep 9 x 13 inch casserole dish.
  • top with shredded vegan mozzarella cheese and bake for 18 minutes. serve and enjoy!
