this baked pasta recipe is addicting, you’re going to want to add it to your weekly menu rotation.

my Creamy Vegan Cauliflower Caesar Baked Pasta yields a lot of food.

if you have a large family or a lot of people to feed, then Meal Prep Vegan Cauliflower Caesar Baked Pasta is perfect.

however, it’s also great for meal prep! use a nutrient-dense pasta like chickpea or lentil, and you have a really nutritious dish.

if you’re looking for a way to sneak in some veggies for your kids, this is a great option! they won’t even know what the sauce is made of.

the creamy sauce is actually so wholesome even though it looks rich!

the base is made with cauliflower and hannah sweet potato, would you have ever guessed?

this recipe is not complete without some delicious vegan caesar dressing and you can use any brand you want.

i love mother raw roasted garlic caesar dressing, it has a fantastic depth of flavor.

while the dressing i used already has garlic in it, i added a couple of cloves to the sauce too.

nutritional yeast and vegan cream cheese or sour cream really balances out the flavor and adds cheesy goodness.

while this is a pasta bake, you do have to cook the pasta first.

i like to cook the pasta a little over al dente because then it bakes so well that way.

you’re really going to love this sauce! as mentioned, it’s made with cauliflower and sweet potato as the base.

while i boiled the cauliflower and sweet potato, you could always roast them!

that will actually add even more flavor to the sauce, so do whichever you prefer :).
