preheat the oven to 375 degrees. boil the cauliflower and sweet potato for about 12-15 minutes or until the slices are easily pierced with a fork.
then, add all of the sauce ingredients to a blender and blend until a smooth sauce forms. mix with the cooked pasta and place in a deep 9 x 13 inch casserole dish.
top with shredded vegan mozzarella cheese and bake for 18 minutes. serve and enjoy!
